The Sette 270 is AU$530 and the Niche Zero is around AU$1600. If they are very similar in what they produce there is really only one winner. Just bought the Sette 270 to replace my failed Sunbeam, a AU$200 burr grinder. Has made a huge difference to what I can produce from my 12 yo Rancilio Silva.

Very, very important consideration: The "38mm" burrs in the Sette is the dimensions of the inner burr, while the niche "61mm" is the diameter of the outer ring. The actual burr size isn't *that* different, niche is still bigger ofc.

Really hope that you get a chance to do a detailed review of the DF64 similar to what you did with the Baratza Vario. Talking about alignment, modifications, and blind tasting against the Vario + (or modded Vario) would be very cool to watch. So much community discussion is currently revolving around the DF64.

Absolutely. The whole point of diminishing returns. My impetus for this video was in response to the insane difficulty of obtaining a niche. I hope people see this and know if they can't get a niche, it's not the end of the world haha

“Lance U Rock” I’m very happy you made this video. I have the Sette 270 and always wondered if ‘upgrading’ to the Niche was necessary. Glad to know. The Breville Dual Boiler with Sette 270 was actually my home workhorse team for years (until I sold my BDB in order to preorder the long-awaiting Odyssey Espresso Argos). FWIW- I also got a 3D printed single-dose hopper with a weighted auger for my Sette, and found the quality of the grounds was improved as a result. Thanks again, and keep up the great content.

Thanks, Lance. My Niche arrived back in October after struggling to buy one for several months. I went through more espresso than I would have expected during the first week of ownership, but the Niche is doing great now. The espresso tastes really good.

I’m very new to the realm of nice home coffee, but I’ve found the sette fits perfectly into my tastes. I really like darker, bitterer roasts and brews and (likely because of this) have found the sette perfect for infusion brews or things like the hario switch. Plus its impossible to argue with the price to performance ratio. While I might enjoy the niche if I ever get my hands on it, I can see almost anyone getting into home espresso getting years out of a sette.

Lance.... you rock Love this kind of vid, more of these comparisons please! Lots of reviews focus too much on design, work flow etc rather than quality in the cup. And the comparison between different products is so useful. Df64 vs cheap 60mm flats vs Forte would be really cool

GREAT timing on this video! I have had the Sette 270 for over a year and a half now and have a love/hate relationship with it. I like the way it looks, it works pretty well for single dosing and make good grinds. but GOD I am sick of the noise!!! (also annoyed on how the dial tends to move while grinding). So after much debate I finally ordered my Niche Zero this week and this video re-assures me that I made the right choice!!! Thanks!!

Hey Lance! It would be also really interesting to carry out the similar battle between handgrinders for pourover (or other filter brewing methods), for example 1Zpresso (J or K series), or Timemore (popular C2 or their premium X model) vs Comandante. Price difference is like double, but some people say taste difference is negligible. Would be really nice to hear your opinion

Absolutely! I am too. My goal with this video was less to say anything negative about the grind or, but to ensure people who have not been able to get their hands on one that the alternative grinders out there are very good as well. The biggest thing the niche can offer in my opinion is the workflow and quality of build.

Hey Lance, what was the roast level on those beans? I've been tempted by the Niche because I've heard it's better for light roasts than the Sette, while they might perform similarly on medium to dark. Is that true? Would love to get some comparative tasting across multiple coffees, doesn't need to be a blind test. This topic is one I've been waiting a long time for someone to do, so thanks!

The coffee was light! I almost exclusively drink lightly roasted coffees and have used the sette for years with them

I had the Sette 270v2 for 2 years, it's really a good grinder, it produces really fluffly grind without any lumps (in no time) ! Really impressive ! its only weak point is the noise! I sold it and bought a Eureka Mignon Specialita'. I didnt noticed any improvement in flavor or body, maybe a subtle improvement in clarity ? i'm not sure. But it's definitively more quiet, and the build quality and aesthetic is way superior. Keep in mind those grinders were not designed for single dosing. Only the Niche was. Thanks Lance for the video, it's always fun to watch !

I would recommend against the WI. There are so many reported issues with the Tech in it. I would go with the base version 270. And merry Christmas to you too

Friend has a 270wi and it’s also been great, but one thing we noticed is we prefer weighing the beans pre hopper where the 270wi weighs the beans in the portafilter. Based on our workflow the 270 is better Repairing the 270 & 270wi are both super easy though and parts are easy to obtain. Best thing about them. You rock

I had the Sette 270 for about 3 years and upgraded to the Niche last year. I find the Niche a bit easier to dial-in my shots and cleanup is great. Adding the portastand and funnel from Decent makes it an even better setup as the metal cup isn't great for grinds with some static. But the big complaint I had with the Sette was that it was too darn loud (obnoxiously so in a home setting). My wife is so much happier now that she can sleep in on weekends :).

Absolutely! So you have noticed that the taste is not incredibly different, though there are certainly differences, the biggest upgrade is in the quality of build, the quietness of the grinding, and the workflow.

Have you tried adding a spritz of water to negate the static when grinding? It made a huge difference for me with static and chaff spray

Prior to grinding. Dose beans in a dosing jar, one spritz of water OR two (and I mean two) droplets of water. Shake the jar with your hand covering the opening, then dump in grinder and go!

I had a sette for a couple of years and upgraded it for a niche a year ago. The difference in shots wasn’t as big as I had thought it would be. But I’m sure the niche will still be grinding long after the sette is dead. Th niche has far superior build quality. And if you’re into light roasted coffee I don’t think the sette will handle the density and hardness in the long run. No problem with the niche there. I liked the sette but I have no regret upgrading to the niche.

When my Sette dies, I order a $40 part, get it in under a week, install in five minutes, and I’m up and running again. Not a big deal.

Exactly! Not a big deal. But, in the long run, for some people who have the means, the niche could be a much better option for build quality and for not having to do replacements

@@LanceHedrick I had to repair mine. The gear box is 50 EU and It's a pain to install. Doable for someone who's handy, but certainly not for everyone. The simpler repair is the motor+gearbox combo. It's about 100 EU. A lot easier to install, but still not trivial. Since it's bound to break down after about 1500 grinds, the Sette is not a grinder I would recommend. If I had known this, I wouldn't have gotten the sette. Now I'm stuck with a loud grinder that requires a finicky repair every three years.

From my experience the most obvious difference of two grinders with same type of burr (conical here) is gonna be clarity, which is the most significant influence of fines in the taste. Other than that, all the "body", "sweetness" etc is very subjective. However, flat burr can have a rather big difference in taste vs conical, as the shape of the ground particles are different when inspected closely, which will influence the total surface area given a similar ground particle size.

Absolutely! Just know that you'll need to keep really good care of that grinder. And if something does happen, make sure to reach out to customer support 1st. they usually take care of issues for a while

@@LanceHedrick I have the same set up - and re: taking good care of it........... a few weeks ago i was adding water to my Gaggia CP and - while distracted by my 5yo I POURED IT INTO MY SETTE. OMG i panicked and froze. My wife was like 'wtf - clean it up!' as water flowed from every intersection of its' plastic body and out of the ground spout. I was horrified that I'd just ruined 1/2 of my daily medication process (though somewhat thrilled about the likelihood of getting a new toy). I took it apart and put it in front of a fan for 24 hr and it seems to be no worse for wear. I realize some corrosion may have been initiated - but so far so good. I'm only a year into making actual non-Bialetti espresso - so I am not yet entirely ready to move on from my entry levels.

Thanks Lance, you rock! Love your videos and you have already helped me improve my espresso dramatically across your videos. I am looking at upgrading my grinder from the ECM C54 as I can’t fine tune it enough depending on the beans. The Niche looks awesome and is in my budget, I love that it is stepless and the workflow is perfect for me, but I am not sure if flat or conical is more preferable for espresso. Do you recommend the Niche or something else with that budget in mind? I am even happy to shell out a bit more for something very special.

Hey Lance- You rock! I think this was a great idea for a video and was well executed and I enjoyed it. However, I did have a few suggestions that I think could make comparisons videos like these even better. First, I think instead of just talking about the workflow, maybe we could watch your workflow with both grinders for just the first shot. That way u can talk about as well as show the real world impacts of the improvements of the Niche and show how it’s easier, faster, better distribution, sound while actually grinding, etc. This would seemingly be more useful than just mentioning those concepts. My second suggestion is with regards to the stirring. I really enjoy your video style and transparency in process and I do think it’s a good idea to show it for the first shot to mitigate questions, but showing the thorough stirring on the 2nd and 3rd shots instead of just mentioning that you repeated the procedure seemed like video time better spent on showing the shots or the workflow. Lastly, I focused on trying to guess which one was the Niche, rather than which one you preferred. For the 2nd shot, you guessed wrong because of the body but the other one was more clear and was the Niche. Which did you prefer and why? Would some prefer the body? I think focusing on what is better and worse within the shots is more useful than just seeing if a talented coffee professional can guess the grinder. Anyways, love the content, keep up the great work, and hopefully the feedback is received in the spirit in which it was intended. Merry Christmas

Thanks for the comment. Tried to speak in terms that were not subjective in the sense that I was telling which one I preferred but more so giving terms that I thought represented the cups well so that you could draw your own conclusions. If you go back and watch the tastings, you will see that I was quite descriptive with what I was tasting. But but, your notes are definitely noted and I will do better in the future

Awesome comparison! Lance, you rock. My biggest takeaway is that in home setting, shot to shot consistency will never be perfect no matter what, so basically Niche is as good as it gets all things combined (grind quality, build quality, workflow etc), but you can get equally great results from a cheaper grinder. I just got my Niche - and availability seems to have greatly improved recently, it only took 2 weeks from order to delivery to the US - and while I’m very happy with it, I can definitely say that the shots I’ve been pulling with the Niche are very similar to what I had been getting from my Comandante C40 - sometimes better, sometimes worse. I expect the Niche to get more consistent over the next few months as it gets more seasoned, but still the difference in taste is never going to be several hundred dollar worth, like you said. But the looks and the workflow improvements are, to me.

@@Syd7088 I do! It makes a lot of difference. I drink mostly medium roasts, and sometimes light. Without Red Clix, the range between the machine choking to a "gusher" is basically 3 clicks. Red Clix makes this range twice as big - realistically you get about 3-4 clicks that produce a palatable shot. Now, arguably, 15 microns is still a bit high for espresso, and you might find yourself needing to adjust dose (within .2-.4 g for me usually) to get that final tiny adjustment.

I have had the sette for 6 months now. Yes, it is loud, it is 10 seconds of your day - get over it. For the ultra low retention, reliability, small footprint and reasonable price point I have been very happy with it. I got the base model for less than $300 US, it did not have the step-less ring and I thought I would not need it. As I get further into making espresso I can see the benefit to having that option. It is available for an extra $100 and I will buy it in the future, easy to add on. Because I prefer to single dose I did not need the features of the 270wi. I did have to use their customer service and it was as fantastic as everyone says it is (I messed up the one/off micro switch when I first cleaned the burrs, newer models don’t have that fail point.). Excellent comparison review, LH does a great job. Clear example of the law of diminishing returns, I will spend the difference on good coffee beans.

I’m normally a 19 - 20 g in, 38 out, but tried your twenty and fifty today (twice!). Not sure which I like better, but happy to have two recipes. It really worked with the Honduras I have, and the juiciness my Vario with SS burrs brought out. Cheers!

So, you know, you really do rock. Initially I was using an M47 for espresso, and I was able to dial in pretty much as I needed to. But as I’m sure you know it’s a lot of work. When I got my Niche, the biggest difference I noticed was how fluffy the grind was, I ended up moving to a larger basket 😳

Lance, you rock. I really dig the concise, but in depth nature of your videos. I was wondering what espresso setup you think meets the point of diminishing returns. I’d like to buy once and not have to consider upgrading (at least for a while lol). What is, in your opinion, the best espresso grinder and espresso machine “for the money”. I’m willing to spend more for things like speed, quiet operation, and a “seamless” user experienc. And of course tasty espresso. I also really like making milk based drink. Big milk guy lol. Hey Alex! In my opinion, which I feel I've made pretty clear in my videos though I know I have a ton to wade through, I believe the endgame budget setup is something like a Breville dual boiler for the espresso machine and then if you are more so into milk drinks than anything else, honestly the niche grinder is incredible. On the other hand you could get the vario grinder which I have made a video on because it can do both filter coffee and espresso quite well.

Absolutely. Weighing pros and cons and price are all considerations, of course. But, I mainly wanted to dispel the FOMO so many have on missing out on these. They're great (niche) but not revolutionary imo

Very helpful review! I have owned a Sette 270wi for 2.5 years. I'm on my 2nd gearbox after the first one failed exactly 1yr in. The 2nd gearbox is starting to go now too, 1.5yrs later. I make about 3-4 espressos per day and don't single dose. Mainly, I love the grind by weight functionality to the 270wi as it dramatically simplifies my workflow. Waiting to see what Baratza is going to do in terms of hopefully providing another replacement gearbox, but have been looking at alternative grinders in the meantime. The Niche is now about the same price here in the UK at 500GBP. I'm really torn between getting one or switching to a flat burr grinder!

Yep. In the UK, too. Been using the Smart Grinder Pro as opposed to the Niche, but I can't shake off the feeling that there's going to be something greater than the Niche to upgrade to at some point soon. The SGP isn't too good for espresso if I'm being honest, so the temptation to upgrade can be quite alluring. I have to remind myself that at the end of the day it's still espresso, and I've got more important fiscal priorities.

I have a Macao M4D grinder that is a 58mm flat burr. I’m trying to replace the burrs if I can find a replacement. I’m currently using a smart grinder pro too, the Macao at over double the price is much better than the smart grinder, I can’t go fine enough on the smart grinder pro, so I’m using 22 grams rather my usual 28 grams. I like the weight option of the 270wi, but I’m wondering how it will compare to my Macao, no point spending money unless I’m getting the same or better quality.

Great content Lance, it is also worth considering the resale values of these, the Niche scores exceptionally well there, if you have the budget you can buy with confidence in that if you don't like it you can pretty much get all your investment back when you sell. I also think similar to high end audio equipment in that it suffers from diminishing returns the more you spend, after getting a decent budget set up going, when you upgrade from say a Niche to a Webber you will only gain a small improvement in taste, you same goes for espresso machines, but you will get an improvement in aesthetics and longevity through better engineering and components.

Oh absolutely! There are a lot fewer differences in conical burr grinders from cheaper to more expensive like in your example the nicje versus the Weber conical burr grinders. But there is a much bigger difference in the flatburr world. of course, this video doesn't deal with that, but it's worth noting here. Anyway, I think the people who are in a market for these 2 grinders are likely not going to be selling them anytime soon. It seems to me that people with conical burr grinders tend to Max out in that area and move on to flats soon enough. But, of course, I am painting with a broad stroke

Love the videos. You ROCK. That said would love to see you do another video that is a little harder on the Niche. Grind and brew 5 shots with the 270 and only one with the Niche. Then see if you can differentiate between them over 5 sets. That is a lot of coffee but that is a lot of money for a grinder.

I've done plenty of these shots at home, as noted in the video. I didn't feel the need to do them on camera because if people can't believe me at my word, why would they believe a bigger blind taste is factual? Lol Hope that makes sense

Now that was useful. I was happy with my Sette 30 with the 270 adjustment ring. Did month of research. It is loud, yes but I am single and it does not bother anybody and its only for a few seconds anyways. I always thought the high prices of some grinders are insane and way out of my reach. The Niche is beautiful though. But you confirmed my suspicion that after you reached a good level, it does not make a huge difference and definitely not a several hundred dollars or thousand dollar difference. I am now very happy with my Sette and concentrate now to find a good espresso machine I can afford. My current machine is OK. Got it for $40 on Facebook. Was $1500 new but it is not as manual as I want it to be so.... Almost saved up for a Gaggia. :-) By the way... You rock!

Lance, I have possibly a tough one for you. I own an older Mazzer Super Jolly that I got for an absolute steal. I cleaned it up (for the most part but they decided to repaint in a rugged almost bedliner type paint) and did the doserless mod. Though I know it won’t be my forever grinder, it is hard to compare this vs some of the budget type grinders due to newer and better tech. What are your thoughts?

I have the Baratza Sette 270 with both sets of burrs, espresso & drip/filter. I do mostly filter coffee and use the filter burrs. Yes, the Baratza is noisy but it doesn’t bother me. My wife doesn’t however appreciate the noise. I also like the Baratza’s repair strategy but I’ve never had to utilize it over the 2 plus years of ownership. Also I’m a subscription service customer of Onyx in Rogers, AR. Love their coffees. Robert

Thanks for the test! I have a Fellow Ode with SSP burrs but from time to time I notice some motor jams on very fine grind settings which is quite frustrating (and also the settings/clicks aren't that flexible in terms of an espresso grind). I know the Ode was not supposed to be an espresso grinder so I was thinking about going for another grinder for just espresso. Do you think the Sette would be a great option? (Grinding wise the SSP set is quite good though.)

Make sure to start the grinder before putting beans in. And sette is a great option!

I have the Sette 270 and found that if you put beans in the hopper, it works much better: You can dial in the weight by programming the timer. Plus this makes it quieter, it grinds in half the time, and eliminates popcorning, which makes the grind better. And workflow is faster.

Absolutely! Always having beans to feed the dose is a better option, but then the beans can go stale a lot faster when in the hopper. So I think that's the impasse most people are at. Fresh coffee versus better grinding but old coffee.

Having had both of these, Lance is spot on. The flavor for money is not significantly different. However, the work flow on the Niche is certainly superior which is a small thing that adds up with daily use. Additionally, Baratza’s great customer service not withstanding, the Niche is noticeably quieter and built much more solidly (less likely to need service).

Great video. We don't end up hearing much about the Vario models. Would be interested to hear your take on the two new + models. I want something that can easily switch back and forth between espresso, pour over and drip. Noting down a number and letter seems like the easiest way to do this.

Hey! I have a video all about that grinder. Well, the older version, but overall the way I have modified it makes it about the same as the new version. The cheaper version currently available comes with ceramic burrs. The more expensive version comes with steel burrs as in my video. The main difference is also some metal insides but I have made that modification in the video I have on my channel. If you're curious about it, I would recommend checking it out. I have tried the new ones and they are not any different from mine since I have already done the modifications that the new grinders come with

I had the older Vario model ( basically the same as Lance mentioned). The ceramic burrs on mine at least had a lot of fine particles, so you get a ton of body not much clarity, I kinda liked the taste profile though, especially worked to make intense drinks with milk (probably because I was over and under extracting at the same time getting a balance of sour/brightness and bitterness), the DF64 is a whole new level of clarity and lack of bitterness, (but also took some getting used to the lack of body!). Steel burrs on the Vario (which can be purchased pretty cheap!) are supposed to be better for more consistent grounds (less fines), I haven't tried them myself but I think it would be a good option especially if your doing pour overs / drip. The vario is almost 0 retention (before it was cool!) and seemed to single dose pretty well, it is easy to switch between brew methods .

Lance, you rock! Here in Aust, the Sette 270 (not the Wi) is currently on sale for AUD $539 and the Niche is on sale as well from the same online store for AUD $1789. While we could probably find them cheaper if we looked hard enough, the Niche is still 3x more expensive than the Sette. The Sette was on my list for a new grinder to upgrade from my Breville SGP but instead went with the Urbanic 070s from Lance's Budget Grinder Showdown video from last month. The Urbanic with titanium burrs from Amazon was AUD $450 landed in Aust. More than happy to have the option of a flat burr grinder at that price.

Absolutely! I'm so glad that you went with that grinder. It truly is a fantastic grinder. And if you take some Teflon tape and put them on the threads you can make the knob stepless. Which will open up a whole new host of different grind sizes.

I'm sure the burr size and geometry played a part in it, but I know flat burrs at lower rpm generally give more clarity, and less body (less fines most likely), and higher rpm = more body and less clarity (more fines most likely), so I'm thinking that was a factor as well here.
