I made 10 gallons of excellent fruit beer; 5 gallons of all raspberry saison and 5 gallons of mixed berry (raspberry, blackberry, and blueberry) saison.
Brewed on the Spike Solo and fermented in a variety of fermenters (multiple carboys, a Fermentasaurus, and a FermZilla) including some pressure fermentation and closed system racking, the resulting fruit ale was spectacular! Recipe is below.
WARNING: I forgot to mention an important tip for making fruit beers. DO NOT throw the fruit directly into the fermenter as shown in this video unless you have a way to separate the fruit from the beer well enough to not clog your tubing and disconnects!
I know what I'm talking about here. I learned that lesson the hard way.

12 lb Pale Malt: Brewers Malt, 2-row (Briess)
4 lb Pilsner Malt: Premium Pilsener Malt (Rahr)
2 lb Wheat Malt: Wheat Malt, Red (Briess)
1 lb Vienna Malt: Goldpils® Vienna Malt (Briess)
Hops:
7.2 AAU Cluster hops @ 60 minutes
3.2 AAU Hallertauer Mittelfrüh @ 5 minutes
Yeast:
1 packet Lallemand Belle Saison
Other Ingredients:
8 mL Lactic Acid
2 Whirlfloc Tablets
7.5 lb Frozen Raspberries, Blackberries, and Blueberries

Well... Well... Well... We finally get to see what "Larry" is really like when he's not on camera... Nice job!! Loved it! Looks like a great beer. I agree with the assessment of the raspberry, it is a really tough flavor to impart in beer. I have tried a lot of different methods. Cheers Larry!!👍🍻

I recently found the same but the aroma of raspberry was incredible but diminishes a bit on the palette (even though it still a tasty beer)

Great timing for me just put up a Chocolate Peanut Butter Stout. I thought why not swap the peanut butter for black cherries. I was planning on using a black cherry extract at bottling, now I'm using fruit. Thank you for your efforts and enjoy your videos.

Larry that was a very fun video to watch. Great job on the editing and dialogue. I'm sure that took a lot of planning and time to edit. I just did my first fruit beer myself, using 10 lbs of plumbs i got from my parents plumb tree and a blonde ale I make all the time as a base(5 gallons). Still in the fermenter, cant wait to try it though. Nice pink color in the fermenter.

Enjoyed the video.. a lot of effort went into the making of the video the brewing was the easy part. I currently have a Peach and a Cherry wheat on tap both are tasty. I have the ingredients for a Raspberry wheat, you have me thinking I may now instead brew up a mixed berry wheat.. Cheers🍻

I'm cold crashing my raspberry beer now. Racked to secondary with the 2kg (4.4lbs) of raspberries. I was worried the mixed berry would end up tasting like some strange flavour you weren't sure if u liked or hated. But i did add 5g cascade and 10g mosaic at flame out... can't wait to get it carbonated👍 Thanks for the video Larry

So I’m currently brewing your Zombie clone and while waiting I poured my first glass of your berry beer. I used the mixed berries. OMG! Amazing. I’m torn 🤔 . I wan’t to share it with my friends but…. that would mean less of it for me 😝 . Great recipe. I’m going to do it again and use all blueberries. I’m on my 5 batch of beer since I converted to all grain biab. Thanks to your help I’m nailing my water requirements, og, and fg and making great beers. Thank you again. My name is Laurence and recently brewed a berry ale too. Base beer was a Belgian blonde, pilsner malt and saaz hops. (nothing fancy middle of BJCP quidelines and around 4%). Then I added raspberries and a touch of blackberry (wanted more but the shop had what it had). Same as yourself I wanted a bit more tarte but didn't get it, similar colour to yours but I did like that the beer smelled like a fresh punnet and finished really clean (didn't taste as fruity as it smelled) but finished clean nontheless. I brewed it for my birthday in a couple of weeks so I think the keg will get kicked fairly quick! It is perfect for a warm September evening (or lawnmower beer as you lads call it).

Hey Larry, been wanting to try a saison recipe on my 35L Brewzilla. Would you recommend this recipe fruitless? As in, without fruit? I just did a raspberry blonde, which turned out amazing if I do say do myself, so I'm good for fruit beer at the moment.

That makes sense. I haven't gotten into recipe design yet except for adding raspberries to an existing blonde recipe. The extra sugar from the fruit bumped the ABV up significantly, so I learned something, haha. I opted to grab ingredients for a classic saison recipe from the Beer and Brewing website, so we'll see how that works out in a couple of weeks.

Please check in excel file the temperature conversion to Celsius because after change it, it still was 158 number in cell Y21.

This recipe is currently fermenting and I can’t wait to try it. Should I sanitize the fruit with vodka and can I add it to the primary fermenter (I wasn’t planning a secondary)? Thanks for any help. This is my first fruit beer.

That could work. Only thing is that a new fermentation will start and churn up the trub that has settled out. You’ll just have to wait a little longer for it to drop out again.

Getting ready to brew this. One question I have is did you rack onto the fruit in a secondary or just add the fruit in the primary on or about day 5?

I added the fruit to a second vessel and racked the beer into it, BUT don’t just add the fruit loose like I did. It’ll clog your hoses and popits in the disconnects including in the keg later. Bag them in a sanitized mesh bag before adding them.

Love the video Larry! I will be giving this recipe a try once I get a vessel rated for pressurized fermentation/transfer. Two questions though, at what temperature did you ferment at? And you said you transferred/racked into secondary ~5 days, was primary fermentation still active at that point? Thanks and love the channel!

My basement is regularly in the 60-70 F range; sometimes a little over 70 in summer. I had to look at the recipe notes to see what was written. It says near end of fermentation which was ~5 days.

Is it safe to use pre-frozen fruit. Had it been pasteurised? I would be concerned that the fruit may carry some bacteria that may infect the brew. Both beers looked great by the way. Not sure about your rude burpy friend. 😂🤣

Hey Larry, thinking of making a mixed berry version. I am worried about clogging the carboy and was thinking about making a purée to help. Any thoughts on purée versus whole berries? Love your content 🍻 Thanks!

I don't think you'll clog a carboy with loose fruit, but you will clog your racking tubing and keg disconnects if you don't put them in a mesh bag. Was a real PITA to disassemble my keg posts repeatedly to unclog them. Puree should be fine unless it's too chunky.

Depends on your expected losses during the beer making process. I use my brewing spreadsheet to calculate total water.

Larry - loved your videos for 11 day lager got me thinking and with Voss no1 strain you could get that down to UNDER 5 days!! - you pitch @ 40C and my grainfather will only go to 36C but it ferments in 48 hours cold crash/gelatine and a diy carb machine and todays brew should be ready to drink Sunday (a colt 45 clone............)
