Hey everyone! Today is a special one as it marks the end of our canning adventures for 2023. I'm both excited and relieved-while canning is a passion, I'm also looking forward to unwinding during the colder months. In today's video, I'll show you how to make an absolutely delicious balsamic onion jam. I have used a fan to help with the onion fumes. A small fan behind or to the side of you, blowing away from you, has worked for me.

I also do onion marmalade (jam). So delicious. My family loves it! I canned it as well. We serve it with marinated pork chops, grits made with heavy cream and garlic pan fried green beans. It's good on literally anything! You should be so proud with your canning accomplishments. Amazing harvest!

The onion jam on top of goat cheese on bread, toasted under the grill, then top with that jam. Delicious!!

I am totally with you with a dislike for snow. I used to live in BC, a newbie from London, UK. We had a farm right next to the USA border. Winter 1992/93 was especially harsh, temps dropped to -20. We had a power outage that lasted 4 days but the milking parlour electrics ran off the generator which we had to attach, in the dark, to the parlour outlet. Our home was not on the generator and we took deck chairs into the milking parlour as that had heat! Only time I ever wore a head covering as the cold felt like cold steel on the top of your head. Now I live in the north of England, were snow seems compulsory and I still hate the stuff. I think you are amazing coping with your large amount of preserving with not the largest of counter tops. I love it, looks very rustic. I loved making fruit jam, made just about every flavour. I visited a good friend in the Okanagan for a long weekend and bought many flats of peaches which produced the best jam ever. Your videos bring back a lot of memories for me. Thank you for this upload.

The kids should love it also your onion jam because you can spread it on your hamburgers, and also spread it over your meatloaf and roast.. we made this about 2 years ago and my husband loves it. 😅😅❤❤

I don't have a freeze dryer but I know that you can buy an insert for converting a 4 tray to 5 tray. Thank you for your vlog. I love balsamic onion jam. 😊

Hi, I’m new to your channel and really enjoying your videos. I do not own a freeze dryer. However, I have seen a couple other homesteaders that I watch on KZfaq recently upgrade their freeze dryer trays from 4 to 5. From what they have said, Harvest Right will send you the rack to upgrade to an extra tray, at no cost. Hope this is useful info!

Chelsea are you aware that there is a conversion kit that you can get for your Harvest Right freeze dryer that will turn it from a 4 tray to a 5 tray system. Living Traditions Homestead did a video quite awhile ago showing how easy it is to do the conversion. Adding one more tray would make a significant difference over time if you are running your freeze dryer constantly. Just wanted you to know if you weren’t aware of this. ❤️🥰🙏🏻🇨🇦🍁

My husband loves the onion jam on a burger. I canned some and freeze dried a little bit. He prefers the canned, it’s easier. He’s not adept at reconstituting yet. I’m loving my freeze dryer. After a year I’ve got bins and bins, full!! Next up is pumpkin/squash purée My onions went over the weight limit before I reached the edge. 2.5 lbs was below the edge is what I’m saying. 😊 Garlic however, was not.

Next time try making Maple Bacon Onion jam with maple syrup. So delicious and your kids will love it too. Different onions, different sweeteners or spices or no spices at all can make a difference in flavor of the jam. Dan is doing a great job on the bunkie. I love that loft area. It will make a nice warm place to sleep in cold weather. We are getting mid 20F evening temps this coming week so time to finish cleaning my garden and pulling dahlia tubers. Already looking at seeds for next year!

The canning looks delicious & I’m happy for you getting a break from preserving, although you are always busy in the kitchen! I love my birch cabinets even though they’re recycled from a school homeconomics that had the option to salvage. I think I’ll strip mine to bare wood & oil them next time I re-do them. Would love to see a close up of the chopped onions as I am not sure what they would look like done in a food processor. My hand chopped are more of a dice and my food processor is more of a mince. Finally noticed you are Williams lake I have been trying to guess and was thinking south Kootneys 😀

Jam looks good- might have to try making some. Cabin looks great! I am curious though why you would put the solar array between the cabin and the house - I would think the edge of garden and pasture would be more beneficial...a little further away but out of sight a bit and in full sun. Just a thought.

When I chop onions ( I freeze them in one cup baggies inside a big freezer bag for later cooking) , I peel them into very cold water in a big bowl with a big plate or pot lid over it. This cuts down on the stuff making my eyes burn and tear up. I let them sit in the cold water about an hour. I do like the idea of wearing swimming goggles. 👍🏻

It looks like you use acrylic paint on your cupboards. If you wanted something that lasted longer you would have to take finish down to raw wood and use oil base. Love the channel.

I share your sentiments, a real sense of accomplishment to see all that preserving done! But winter is the same for us a chance to wind down a bit, so I really dont mind it. Love the turtle necks Chelsea looks so cozy for the cold weather. Does anyone know if you can re-use the Mason classico spaghetti sauce jars/ with a new lid of course for pressure canning?

I love sweet savory too. I just made apple pepper jelly, I've made watermelon pepper jelly and onion pepper jelly. I want to make tomato jelly, and I'm going to do this recipe! I love balsamic vinegar too. Love it. It's a staple in our house.I love a good snack board. I enjoy the variety of all the different flavors and eat small portions like that all the time. I really enjoy making different kinds of jelly. In the spring I make dandelion jelly and I tried corn cob jelly this year for the first time. Both flavors are a kind of like honey. I also made rose hip and apple jelly, and crab apple jelly. Raspberry and strawberry jelly. I think I have a small addiction to making jelly..😂 I just counted and I have 65 half pints of jelly on my canning pantry shelves! 😳 😂 guess I better go make some toast.

You need to place a wet towel in the cutting board the ‘fumes’ will go to the wet towel and not your eyes.

I recomend trying ajvar, it a tipical balkan souce and its best homemade and its is best eaten with meat. You make it prom red papers

I can eat that Balsamic Onion jam on a spoon out of the jar it is sooooo yummy. I set a small fan on the cupboard beside me blowing the onion fumes away and it really helps.....just a thought. God's blessings....🥰🥰🥰

I so enjoy your videos! I have a bunch of herbs loaded in the freeze dryer right now as we are expecting our first frost early next week. I also have the last of the apples in the water bath canner right now. I pulled a load of apples out of the freeze dryer this morning. There are 6 apples left on the counter....what a relief. I have 25 lbs of tomatoes sitting on the counter. I just couldn't help but get a box of what is the last of field tomatoes when I picked up the apples. It will be ketchup tomorrow. I agree that it will be nice to enjoy a slower pace

I too have old cabinets. I should put some more trim on them to "change them" a bit. I painted them a deep green, to match my Formica green marble countertops. I loved it, but I'm ready for a change . What I'd REALLY like is butcher block countertops, and a different color cabinets. Maybe in the spring???❤

You should put a light under your white shelf above the stove. It would bring some brightness over there, like you mentioned when you got white appliances again.
