Have you seen this strange word in an ingredient list and wondered what it was and why it was there? Here is the answer for what lecithin is, and does, and whether it's safe.

I work as a busser and Chef was exclaiming "Behold the magic of lecithin" over some emulsion. I asked him how it works and he explained it in general terms. Thanks for the tutorial!

Thanks for the informative demonstration. I'm adding Lecithin to my supplements and I'm trying to learn as much as possible about it. My Dad actually suggested rubbing it on my daughters diaper rash and it worked like magic. So I assume it's good for the skin along with our nervous system.

Did you ever get your sound work improved? For any other soul out there wondering how to make good enough sound track for video: Tuber should never ever record spoken word from distance using camera mic. Distance limit is like 1m ie. three to four feets. That is because camera mic is too far away from the spoken source and the reverberant room effect starts to dominate. That destroys easy listening experience. Sensible solution is to connect lapel or lavalier mic to external audio input of camera. That makes HUGE difference! So you need only to bring mic near the talent. The info in this video is such great. Thank you for sharing!

Thanks so much for the info! Question for you or anyone that knows about emulsifiers. I recently started a keto diet and have been making unsweetened iced green/guayusa tea and adding collagen peptides and coconut milk. If I use organic CM it’s pretty much guaranteed to separate in less than an hour regardless of what temperature the tea is when I add the CM. It’s not very pleasant to drink iced tea with firm chunks of coconut fat floating in it so I’m wondering if lecithin would work? Without CM the collagen peptides mix easily and never separate so I don’t think they have an affect.

I add sunflower lecithin (powder) to my bulletproof coffee which includes MCT oil, coconut oil or butter (sometimes all 3) and they mix quite well and my coffee turns into a frothy latte.

Nice demo but next time don't be so nervous after all you did a really good job! i want to use the lecithin in my homemade lotions instead of emulsifying wax. Thank you!

It's supposed to stimulate bile flow, which can help break up fatty liver fat globules; and possibly help to dissipate/dissolve gallstones as well. I have this problem and am starting on it myself. I am using the egg yolk lecithin and not soy lecithin, which is obtained by using hexane (a toxic substance)

@SpurtleandTrivet I'm trying out lecithin as an emulsifier in water soluble oil for making lathe/machining coolant. I needed some idea of how much of an oil-to-lecithin ratio I should start experimenting with. I'm assuming that you are using 3 teaspoons to the tablespoon here which gives me a 12 to 1 ratio by volume. I'm using powered lecithin, you seem to be using lecithin oil, do you know how that might affect the required ratio? Thanks in advance for your time. Chook.

Yeah it often comes in powder or granule form. it likes a small amount of heat to fully incorporate into your oil/water/vinegar. Low, ~150 degrees F is all you should need, with lots of stirring.

10 grams of sunflower lecithin powder per day for about a year now after 10 grams of soy lecithin granules per day for years now.

Thanks for useful tutorial but I'll still use olive oil and vinegar without lecithin on the fresh salad, it's because of tradition. Could you please tell me if I can use your same method to dilute olive oil with water and so by adding lecithin? I want to use it for skin massage since olive oil is too greasy.

I wouldn't recommend this method for mixing oil for skin massage, since the effect is quite temporary. I would suggest using a less greasy oil more commonly used for massage, such as sweet almond oil, or grape seed oil.

I used a lot more in the video than you you actually want to use. I would start with 0.1% and go up by 0.1% at a time until you get the emulsion you want.

They do the same thing, emulsion things together. Soy is just gmo and sunflower isn’t.

As I said in the video, the main component of lecithin, phosphatides, are used by the body for making cell membranes, which is why lecithin is good for the body. There's a picture of a cell membrane with the phosphatides at the bottom of this post: www.spurtleandtrivet.com/lecithin-what-is-that/

I don't know what you mean by listed, but it can act as a preservative. It is an antioxidant, and the emulsification properties help preserve the flavor of some foods.
