I HAVE TO SAY I'M JUST A DUDE WHO DOESN'T KNOW HOW TOO COOK,BUT I HAD TO MAKE THIS CAKE, MY GOD IT TURNED OUT PERFECT.IT WAS THE BEST CAKE I EVER ATE,EVERY ONE IN MY FAMILY LOVED IT AND DEVOURED IT..THE CAKE WASN'T REALLY THAT HARD TOO MAKE LOL MY COOKING SKILLS ARE I CAN BOIL WATER LOL..I DID TRY MY LUCK WITH A PASTRY BAG BUT THAT DID NOT WORK OUT TOO GOOD LOL THIS CAKE WAS AWESOME THANK YOU

These look more like modified cheese cakes rather than regular cakes. They are probably soft, but still dense and moist.

If you look closely at the cake slice, it looked less like it had the crumb of a normal cake and more like a dense but very moist cheese cake.

Hi Tatyana I made this cake and It was really good, I did have some problems with mascarpone in the buttercream but in the end was delicious. Can you please make a cake with rose water. Thank you for all this wonderful recipes.

That just happened to mine too! In the cake & in the frosting! I was using BelGiosio mascarpone & I'll never use it again ...unless the mascarpone shouldn't be at room temp?

Apparently, for anyone else this might happen to, if any ingredient being mixed with mascarpone cheese is a different temperature it can curdle very easily. Take mix & microwave less than a minute, then whisk then chill 10-15 minutes then re-whip & it is supposed to be ok. Still doing that now! Good luck!

For how long can the layers without the added cream and decoration in a cold place? I want to make the layers in advance.

The cake layers will be perfectly fine for up to 1 week in the refrigerator or freezer for 1 month. Make sure you wrap the cakes very, very well so they don't dry out! :)

I try not to over-mix the flour since the more you mix flour, the more the glutens develop and the batter becomes heavy. :)

Hi! I haven't used coconut flour before, so I'm not sure about the substitution. Most gluten-free flours don't work as direct substitutes for regular flour. They just don't have the same volume or texture. You can use the maple syrup and olive oil, but I would increase the flour by 1/3 cup to thicken the batter.

We tried this recipe with my mother-in-law and it was delicious, but the cake was densed and heavy. Any suggestions of what happen? We love the icing. We’re gonna do it next time with a yellow cake 😅

Hi! I'm so happy you enjoyed the cake! This specific cake is a little on the heavier side because of the mascarpone cheese. You can use the frosting with my other cake recipes. I also have vanilla cake layer and sponge cake layer recipes :)

My cake turned out with a lot of moisture and greasy, I followed the steps, impossible to eat. I found the method very difficult, I have to say I'm a good home baker, I made lots of cake. I'm glad I tried the recipe two weeks before my birthday.

Hi! I hope you enjoy this recipe! You can try soaking the layers with a simple syrup to help prevent dryness. I find that most cakes get a little dry but soften when they come back up to room temp

Hi! Oh no, I'm so sorry that the layers didn't turn out. Did you adjust the baking time for the layers? Since it's a larger pan, it would require less time

Hi Tatyana. I'm planning to bake half recipe. For the cheese, could I use 7oz of cream cheese instead of 4oz. I don't have mascarpone cheese at the moment. Tq :)

Cream cheese will work great in this recipe, too. Use the same amount as the mascarpone - you'll need 4 oz for half recipe

Not sure what was wrong ... I creamed the butter/mascarpone with the sugar, all OK. BUT I couldn`t get the milk to blend together with ths previous mixture. I found it odd - then, thinking about it I was basically trying to mix "water" with fat (I was using whole milk, but compared to the butter, it is basically water). The video never shows the final milk/fat mix. It skips to the egg whites part. Any ideas of what was wrong ? Or was it the expected result ? All the ingedients were left on the table nearly 1 hour, so all were room temp. Thanks for the recipe.

Hi Priscilla! I'm so sorry that you had problems with the cake. Once the flour gets added, the mixture will come together. I've since added a few more tips on my blog post because this exact thing keeps happening. Hope you were still able to enjoy the cake! :)

I recommend storing the cake in the refrigerator. Remove about 1 hour prior to serving. Enjoy!

Can we use almond flour instead of regular flour??

Unfortunately, almond flour will not hold up the same as regular flour. The cake layers will simply fall apart.

I think a week would be too long since this has has berries; I don't recommend longer than 3 days

Everything is good, just 1 question- why is my cake not browning like yours in the video?? It’s pale in color. I baked this today merely because of its golden brown color but.... sad 😔

Did you try baking for longer? Every oven bakes slightly differently. Or you can broil on low for a few minutes.
