I love this pure take. I have experimented with using clementines instead of lemon, thyme instead of rosemary, and garlic instead of onion. In the fall, I’ve put apples, onions and sage in the cavity.

If the chicken is baking and reaches the temperature of 165 in the thighs you remove it from the oven it will still go up another 10° (the carryover temperature). Chicken will be dry I pulled mine out at 155° and it’s always juicy and moist. Otherwise excellent video❤

I love the recipes you share. I've made a few of your recipes. I'm having a hard time finding roasted chicken with oil, lemon, rosemary, under the skin and on the skin. I don't have your newest cookbook. I'm the only one in my house. Cooking for one very difficult. I enjoyed watching the roasted chicken with lemon on 20 January 24. It made 4 meals out of that chicken. I'd like to cook more of the recipes you share.

I made your wonderful Nutella cake .. I omitted the chopped nuts bc kids don’t like them like that.. I got say .. it’s a simple cake to make and it was delicious and presented nicely... I added chantilly cream and raspberry on the side. It was a Devine cake... thank you Chef Lidia 🙏.. whole chicken is on sale this week .. .97 cents a lb ... I know what I’m making for Saturday meal..

Yes, you can roast 2 chickens at the same time. Just leave enough space between them so the heat can roast them all around!

How do you roast the beans? Just oil and how long to have them 'al dente'?

If dry beans need a long time to bake, you need to soak them before, then bake them at a med/low temperature for more than an hour and make sure you have enough liquid in the pot
