If you press the button for more than 10 seconds, the watch will restart. If you want to factory reset it, you must go to the settings menu do it from there. Other way is to reinstall the firmware from pc (through SP FLASH TOOL).

There are several videos of replacing screens on iWatch. The principle is similar, but the screen is on the inside of the watch body. I had a similar situation and I found that the screen is very well glued to the body (to be waterproof). So I think it will be very difficult for you to replace it yourself, look for specialized service.
