Ingredients and preparation
2 1/2 lbs of cassava
1 lg onion
3 cloves of garlic
3 head of cilantro
1/2 green chilli
1 small red chilli
1 tsp salt
1 tsp paprika
1 cup freshly grated coconut
Add onion, garlic, cilantro and chilli to a food processor and finely chopped all ingredients
Peel, chopped, washed and boil cassava until tender
Drain cassava, mash and set aside to cool
Add all finely chopped ingredients to the cassava
Add paprika, salt and coconut and mix all ingredients well
Make small round balls, brush a piece of parchment paper and press the ball mixture until it becomes flat
Brush a roti pan/frying pan or griddle pan with oil and cook until both sizes develop a nice brown colour
