Half the plums if you want any to try to get the pits out. It’s ok if you leave them in, just be sure to count how many you have to fish out at the end. You don’t need to peel the plums. Pour the plums in the large pot. Pour water in the pot, just enough to cover the bottom (just a little bit.) Let simmer on low until the plums have turned into sauce. Remove from heat. Fish out all the pits. Spoon 1 tablespoon of chia seeds for every 6 plums you used. Let cool and transfer to smaller containers. You don’t need to use this as only jam; I love eating it by the spoonful, swirled into yogurt or on top of vanilla ice cream.
