I cook some awesome fried chicken myself! Been cooking for alot of years for a very big family! Been cooking since the 60's like my Momma did here in N Georgia mtns! My Momma had Magic Fingers! She could cook anything and never used a recipe! If she saw it, smelled it, or tasted it, She could cook it! She just had that special touch and knew her foods! With a family of 13, She had to know how to Cook and I learned from the Best! That was before we all got married and had kids! Lol Lord knows, I miss my Momma and Daddy! He cooked right along side of Momma many times! He'd peel taters n make the best Fried Taters n onions and Mashed Taters, Cornbread, Cook Beans, and Wash Dishes to help Momma out! It did'nt matter, He'd help her when he could! Many times I was the One in the Kitchen doing whatever if took to get Supper on the table! Now that I have my own large family, I'm doing the same! I am a Georgia boy born and raised and I love me some home cooked fried chicken. My mama always said "grease" instead of oil. So did my memah. But, not to get to uppity, we really should refer to the frying medium as oil 'cause that's what we're really frying with. I hope I'm not being to pickey. I'm subscribed and love your show!

I always shallow fry because that gravy from those drippings is absolute heaven. Nothing beats a good brown gravy after you make some fried chicken or especially pork chops. Something special about pork chop gravy.

I’m kind of confused about your description of chicken and pork chop gravy, everyone I know, and I call that white gravy, I make brown gravy with a roast beef. I’ve been cooking since I was 16….although my first fried chicken dinner I made for my husband was a real learning experience, my Mom gave me her deep fryer, I put the temp as high as it would go, and in less than 10 minutes dinner was ready! Oh my, we got a good laugh out of that. Anyway I’m 80 now, still cook and bake a lot. It’s rainy here today and has cooked off so I made a huge pot of soup and cornbread. Shared it with my neighbor.

One other thing, if you’ve fried using more grease than usual, you can always just pour it off, but save it to season something, like Green beans.

Wisdom! I did not knew the chicken vs hen thing. Thanks. About the skin. As tasty as it is. Sometimes it holds more grease than I'm happy with. So I just remove all the skin in big chunks. And season it and fry it separately. It renders all the fat and you end up with a nice crispy chicken skin. Love how practical the kitchen is. XD I also use Mazola for deep frying. It's what my grandma used when I was a kid. Although she told me that way before that she used to use lard. But that become harder to find and more expensive than a gallon of Mazola. And it specifically had to be that one cause other oils didn't have the same consistency and food would absorb more. I'm not sure how unique the oil is, or if there are better out there. But I tried other brands and I went back to it. At least for frying. I do have Avocad, sunflower, peanut and olive that I use for different thins. But frying is always the corn one. But man, I'd love to try some chicken friend in pork lard.

I had a preacher who used to call fried chicken that Gospel bird I guess most of us in the south had fried chicken for most Sunday dinners I still like to call it that 😊❤

I’ve only fried chicken once in my life, and it wasn’t that good. But everything I’ve tried from Tammy has turned out really good. Might be time to try frying chicken again. I also really appreciate the demonstration on how to cut the chicken. Seeing under the skin for where to cut was very helpful!

A lot of great tips for frying chicken that I didn't know. Like using buttermilk instead of an egg wash before flouring making a difference in the color. And to leave the pieces sit for a few minutes after the flouring to keep the "goodie" on them while frying. 👍 😊

Texas raised. My Grandma taught me how to clean and cut up a chicken when I was about 10 years old. And fry it. Fried chicken was the only thing I could cook when I got married.

I marinate my chicken in buttermilk and I put in onion powder and garlic powder and 2 tablespoons of salt 🧂 it’s just so luscious and delicious finger licking goodness 😂❤❤❤

Im always unsure on how long to cook chicken and tend to over cook it and make it tough :(

Some tips have your cooking oil or shortening at 350 degrees and don’t over cook, take it out once the white meat gets to 160 degrees and the dark meat 165 degrees as it rests the meat will continue cooking. Let your meat set in 1 cup of buttermilk at least 4 hours up to 24 hours. Add 1 teaspoon of salt to your buttermilk. If for any reason your juices run bloody then it didn’t reach the proper cooking temperature. The juices should always run clear. (These are all directions of Tammy, at one time or another, just so you know). That will kind of be your guide. You don’t want to turn your chicken too much or you risk the crunchies breaking off it. You can have a paper towel that you set your chicken on first but no more than 10 seconds as you risk the breading softening up. Some people let the chicken rest a minute on a brown paper sack to soak up extra grease without softening the crunchy batter. ❤

Wonderful looking fried chicken. I used to fry ch ken a lot when all the kids were little. Now I usually just do strips since it’s my husband and me. The leftover ones I cut up for a salad the next night. If the grandkids come I will fry chicken pieces sometimes. They like the drumsticks. I think I’m getting lazy i. My old age. I absolutely 100% agree 👍 with the chicken skin if it’s left on your chicken does hold a lot of fat so I always remove the skin when I’m deep frying and I find that the meat is more flavourful especially when the breading comes in contact with the meat Aussie gal is in the kitchen helping Tammy and Chris with dinner tonight 😂❤

When I first saw you’re sauce whisk I had to get one for myself because I only have the normal whisk’s and I did a google search and I found them on Amazon and I bought a 3 different sizes set for only $12 in AUD so if you’re a Aussie just jump onto Amazon , I love 🥰 love 🥰 these whisk’s as they can act like a spoon and whisk at the same time no veg ( if they’re in with the sauce) don’t get full of veggies Aussie gal is Tammy’s kitchen taking notes and learning how to cook fried chicken 🐓 ❤❤❤❤

Have you seen the water hack for fried crispy chicken? I saw a video and it looked very crispy. *Tammy's way is how I've always fried chicken... just like my grandma did 😂 My mom didn't cook much.

Reminds me of my Grandmas chicken. Hers was the best. She fried in a little grease then put about 1/2 cup of water and a lid. for last five minutes. Turned out perfect every time

Since I’ve been watching Collared valley videos I’ve become obsessed with cooking in my cast iron skillet’s, I was always intimidated by them by screaming hot 🔥but thanks to you dear Tammy one little Aussie gal is killing it with my cast iron skillet’s ❤❤❤❤ and the end results in meat’s that are just so better tasting and the salt crust that you can only get cooked in a cast iron skillet 🍳 thank you darlin girl ❤❤❤❤

That was our Sunday dinner after Church with my Grandparents when I was growing up too. My Grandpa would get Kentucky Fried Chicken while Grandma made fresh homemade vegetables from their garden. They always had vegetables from their garden as my sister and I would help her shell & snap beans and shuck corn to freeze our can. We always had homemade jelly too as they had every kind of fruit you could think of. I Really miss those days!!!💗😥💗

Hey Tammy! I was always taught to cut the wishbone section off of the breast. Do you ever do that? As kids, we used to love that wishbone to make a “wish” on!

Oh, Tammy tells the truth about cast iron. It DOESN"T heat evenly across the pan. I hate the stuff. Heavy, needs seasoning, and it will rust if you don;t use it often. I prefer MAGNALITE cook ware. Chicken looks and sounds terrific.

I find that if I put a lid on anything breaded it gets soggy and falls off,My mom always put a lid on her chicken and that didn't happen, What am I doing wrong?

I tried making fried chicken last night and it ended up coming out super dark. I didn't even fry it for as long as you say to, but I don't know if it's because I used an egg wash with milk or if maybe it's because I used a stock pot to fry it and it was getting too much direct heat from the burner, but I kept a close eye on the oil temp and it never got super high after putting the chicken in. Maybe you have a suggestion. I started my oil at 360 then it stayed around 300 as it fried

Start at 325 and only keep it hot enough for it to fry

O noticed you didn't season the chicken before adding it to the buttermilk is there a specific reason for that. Otherwise your chicken looks great and delicious!!?❤❤😅
