Today I decided to continue my culinary trip around the world by going to South America with Locro de Papa. Locro de Papa is Ecuadorian potato soup. There are a few speciality ingredients. Queso Fresco you can substitute mozzarella or Monterey Jack. The annatto can be found in speciality spice shops or on the internet.
1 Onion
2 cloves Garlic
1 teaspoon Annatto
2 - 3 pounds Russet Potatoes
1 teaspoon Cumin
1/2 cup Milk
1/4 cup Heavy Cream
1 Egg
1 lb diced cooked Red Potatoes
6-8 ounces Queso Fresco

Annatto seeds are available in every supermarket I have ever been to. It is also available in powder or paste form. Just look in the Latino spice isle Badia brand.

I had a tough time finding just the annatto and not built into a spice blend. (Not a fan of spice blends) thanks T

Annatto is called achoite or achuete in my experience in Spanish influenced countries. In the Philippines it was used extensively. In Colombia it also was easily available and ued.

I am embarrassed I forgot to mention that. When I went to the Asian market I bought them at I asked the Latinas stocking the shelves where it was and I called it Achiote! Thanks!

I appreciate the effort but no, sorry, LOCRO DE PAPAS is not blended - basically he's made a liquidy mashed potatoes. Chop the onions real small, add the potatoes, then broth, then cook until the potatoes are falling apart, add the milk, cheese and done! No need to blend, and then add more potatoes!
