Love how you tweaked my recipe! :) Looks amazing! I'm surprised you needed to add 3kg of sugar to get that gravity though. I added a bit over a kilo - I didn't add sugar until I'd already filtered it off the solids and into the demijohn though so maybe that's why? No idea. Mine's almost ready to bottle so hopefully we can compare initial tasting soon!

I use liquorice in my herb recipes as having lots of health benefits, it has glycyrrhetinic acid acid(GA). I will be interested in the wine results.

Hi, thanks for all your videos, they're inspirational stuff. We're across on the mainland in Caithness and very much at the start of our journey into crofting, lots of ideas but no stock or crops on the land as yet. I suspect you'd get a better licorice flavor by using molasses and brown sugar for your sweetener. Good quality licorice candy uses molasses as a sweetener, to give it more body. A bit of aniseseed would be good as well to further sharpen that.

I wonder if the bicarb is added to neutralize the lemon juice.. I think that yeast does not need the must to be acidic. quite the opposite - acidity stresses yeast so many makers of country wines (fruit wines) and meads add acidity before bottling if the wine needs more acidity. But adding the bicarb simply neutralizes the acidity of the lemon juice...

oooh liquorice wine, should be interesting indeed. useless fact or maybe helpful :P liquorice root is a good alternative to sweetener :) unfermentable and supposed to be sweeter than sugar but I never really found that to be the way :)

No, not at all. Not enough banana. The tea is the same, it's going to add depth to the colour, and help with aging the wine

If you use liquorice in brewing it does go crazy as liquorice root has a natural foaming agent that's extracted and used in catering to foam things up a bit even small amounts go crazy I'm surprised your demijohns didn't take off 😂
