INGREDIENTS:
* lychee/Litchi(लीची) - 1.5 Kg
For Lychee Crush:
* Lychee Pulp(लीची का गूदा) - 1 Cup
* Sugar(चीनी) - 3/4 Cup
* Lychee Pulp(लीची का गूदा) - 1/2 Cup
For Lychee Shake:
* Lychee Crush(लीची क्रश) 2 Tbsp
* Chilled Milk (दूध) - As required
* Ice Cream Scoop(आइसक्रीम स्कूप) - Any flavor
* Pistachio(पिस्ता) - For garnishing
For Lychee Sharbat:
* Sugar(चीनी) - 1.5 Cup
* Water(पानी) - 1 Cup
* Citric Acid(साइट्रिक एसिड) - 1/4 Tsp
* Lychee Pulp(लीची का गूदा) - 2 Cup
* Rose Sharbat(गुलाब शरबत) - 1 Spoon
* Water(पानी) - As required
* Ice Cubes(बर्फ के टुकड़े) - As required
RECIPE:
Take some Lychee/Litchi Fruit, wash them & remove the leathery skin of it. Remove the pulp with a knife or with clean fingers & discard the seeds. Keep the pan on the flame & put some Lychee Pulp & Sugar in it & cook on a medium flame. Then in a blender, put some lychee fruit pulp & Grind it. Then put the ground Lychee in the pan & cook well till it gets 1 string of Sugar Syrup. Then turn the flame off & let it to be cool.
For Lychee Shake, take a mixer jar & put some Lychee Crush, Chilled Milk & grind well. Pour litchi juice into the glass & topped with Strawberry Ice Cream & garnish with nicely chopped Pistachio & enjoy the tasty Lychee Shake.
For Litchi Sharbat/Juice, in a blender, put the remaining lychee fruit pulp and make a smooth and fine puree without adding any water. If needed, you can add in a few tablespoons of water while blending. Then filter all the sharbat with a strainer.
For Sugar Syrup, put Sugar & Water in a pan then put some Citric Acid in it. Cook it till it becomes sticky. Then put the ground Lychee Juice in it & boil it once. Then turn the flame off & keep it cooling down.
For Serving, take a serving glass, put some Ice Cubes & pour the Lychee Juice, Rose Sharbat & some Water in it. Mix well & serve Lychee Juice immediately.
