Potato soup is the ultimate comfort food for me! My version is easy, made in one pot, and is the perfect meal in a bowl. Creamy, cheesy, topped with crispy bacon and green onions. Once you have a bowl of this homage soup you'll never feel the same about commercially made restaurant soup! Enjoy!

Adding liquid to roux in small amounts is more likely to create lumps than just dumping most of it in all at once. If tater soup is a bit thin, a bit of instant potato flakes will do wonders.

Steaming is the only way I cook potatoes now. Faster, less waste, with no worries about over or under cooking. Dice and add to soup. Sometimes make wedges from the steamed spuds and drop them into a deep fry for a couple minutes or slice and shallow fry for cottage fries.

I always open up the drawer right below where I'm chopping my veggies, or meat, or whatever and place the handles of the grocery bag on the corners of the drawer then close it, sometimes I oh so slightly tear the bag so that it has a little give and space to open up and it makes for a super easy disposal bag to sweep all the unwanted bits and pieces. Its so handy because I always like to wrap my discarded food matter in plastic bags before putting it into my garbage can, or I just take it directly to the outside dumpster. (Unless my inside garbage is about full enough to get taken out to the main dumpster, in that case I'm not really too worried about tossing it in without the extra bag) There's just nothing worse than a garbage smelling of decomposing food, onions and garlic especially!!

Indeed. But I've found for this soup you can control the texture better by boiling vs. Baking. Plus being a one pot meal is Always a plus in our home. You can literally just change that step and follow the rest if you wish. Thanks for watching, Phil. Have a great day!
