Same. I’m going to part out a portion of the backstrap and use this method. I bought a blended dry red wine, and I have everything else. 👍🏼 - good luck!!

Interesting Technic !! Was the jalapeños roasted also I want to try this it doesn’t look to difficult the trim, the wrap and the pull 105/110 to reach 120 I got it!! Maybe a smaller loin tho Thanks Chef Tom 👍🏾✌🏾🙏🏾

Another fun recipe, poke bowls on the grill. Cold smoked spicy tuna/salmon or a cooked spicy chicken with all the poke fixins would be good.

Looked like what we call a flour sack towel, thin, large size, used a lot in baking, 100% Cotton.

Find a bit of work in the Meat dept, at your grocery store, they're doing so much work anymore, prepping food so you just go home and cook it, a guy that can wield a knife well, can learn a lot!! P.S. leave your really expensive knives at home, just need to be sharp.

The Bearded Butchers do a great job explaining how to break down whole harvests. Whether or not you have access to a band saw might be disqualifying.

Chef Tom, pls don't use a gas torch angled sideways in case liquid propane tries to go thru not vapour. Can be dangerous.
