The Bluegrass Peasant samples the local sausage at a venerable hostería in a hotel on the main square in Valladolid, halfway between Mérida and Cancún on the Yucatán Peninsula. Housed in a lovely Spanish colonial building, the Mesón del Marqués counts as one of the most popular hotels and restaurants in the region.
