Well, some people are just hard to make laugh (especially with money in the line). Humor is also so subjective that it can be hard to get the right joke if you don't know the person well.

I think the circumstance of the reddit reviews doesn't give him any pressure to hold the laughter back hence he just lets loose. If roles were reversed he wouldn't laugh at the reddit memes either.

Because there's a formula. "Loud + funny = content". Appeals to very young audiences and there are lots of those. Connor's not losing his shit, he's just hamming it up so the kids can go "yay, loud monkey".
