IMPORTANT: One, never, EVER wash chicken before cooking it. This is unnecessary and only spreads the problem. Two, NEVER touch ANYTHING--rags, counters, your apron, other dishes, etc., AFTER handling raw chicken, otherwise you risk contamination which can cause diarrhea or the more serious listeria infection which can be dangerous to especially small children, who've not developed enough immunity, the elderly, and/or people with pre-existing health conditions. Two, use a SEPARATE board for cutting and prepping raw chicken and a different board for vegetables which can be eaten raw or don't need to be cooked for long. Three, be sure the chicken is cooked through, no running pink juices or pink color on the meat. Four, WASH THE BOARD AND KNIFE THAT WERE USED TO HANDLE RAW CHIKEN. I use a little bleach (Kenyans call it "Jik"--same thing) to make sure I get everything CLEAN. Finally, wash hands thoroughly with soap and water. Just a few helpful tips from someone who knows something about food, cooking and food handling. Buon appetito. Cheers! 🍷
