I eat peanuts this way here at home. When I travel outside of La, it just seems like everyone else's peanuts are bland. Everybody's got their own thing, but I love the La spice and seasoning. I was raised to love all things Cajun.

Lawd ain’t you got fancy boiling those peanuts. I remember traveling around the South about 40 years ago and stopping to buy peanuts in AL and Louisiana. The were boiling in an old wash tub over a wood fire. I remember my mother making sauerkraut in a big wash tub. If I could only go back in time for just a little while.

@@David-we3sb I add the seasoning right away to boiling water and then add the nuts. The peanuts start to soak up the flavor as soon as they’re put in, so it’s better to add all the flavors first. I use bay leaves, cayenne pepper, and pretty much a mix of spices you’d use in taco seasoning

I love to make these occasionally…I throw any Cajun spices I got in the cupboard in there plus I add fresh home-grown ghost and cayenne peppers… But I always forget when the green peanuts are available. I’m in Florida. Also, I once bought fresh made garlic style that were delicious (roadside truck!), but my home experiment didn’t work out. Anybody have any ideas for THAT recipe? I mean, it’s just garlic and salt I assume, so how did I manage to screw it up? Do you think they could have used some garlic OIL in the boil?

Leave the celery out. And make sure to wash/rinse the peanuts a couple times before you boil them.

This is EXACTLY what I miss about Georgia. Lived there for a time as a kid. Was able to at least find raw peanuts out west so far. I hate dry roasted. Always have. Unfortunately, DIY is the only way I'm getting tasty boiled peanuts. I tried reheating canned peanuts on the stove and didn't like it.

Nice but drain the water off after the first hour and then rinse off and put clean water back in after for the next couple of hours to boil them with the seasonings 👌
