Ingredients:
2-3 Potato (Red Potato/Marris Pipper/King Edward)
6-8 tbsp oil 1/2 tsp Salt & 1/2 tsp Turmeric powder and fry potatoes then remove once golden as instructed
2 bayleaf (Tez Pata)
1 Cinnamon (Cassia Bark)
4 Cardimon
1/2 tsp Khalonjee (Black Cumin/Caraway)
1 cup Diced Onion
1 tbsp Ginger Garlic Paste
Spices:
2 tsp Kashmiri Chili powder, 2 Tsp Curry Powder, 2 tsp Coriander Powder, 1 tsp Chilli Powder, 1 tsp Cumin Powder
1 Cup Tomato puree
1 tbsp Dried Kasoori Methi
1/2 tsp Garam Masala Powder
Boiling water as instructed on video
Coriander to garnish...

What amazed me working in Indian /Bengalis and Nepali restaurants is how the staff do not eat what they serve , its almost always simpler , less oily and salty and no colorings , which were used in surprising amounts . They said it made dishes look better under dim lighting !

That potato curry looks fantastic I have been for a long time been searching for the perfect potato curry. I work in care and I was once looking after a man and I asked him if his wife was a good cook because the house always smell so nice and he must’ve told her because the next day there was a bag of food waiting for me and it was a potato curry and I can say hand on heart, it was the best thing I have ever eaten in my entire life unfortunately I never went back to that house because I wanted to get the recipe and I dreamt about it for years. I’m going to make your one and hopefully it will be similar or even better. peace be with you brother
