And regarding the number of chapters for the video, I think there should not be any hard rule for that. If you want to focus on one topic, then it should be one chapter. And sometimes some chapters are connected so that they can be discussed together. Such as for this video it was right decision to make three chapters in a video together. So finally it comes down what you feel about that particular video.
