According to Dr Glenn Carbines, who has carried out extensive surveys of the NZ blue cod fisheries over the course of his career, the only way to determine the sex of a blue cod is to cut it open. Color is a product of its age, diet, and environment. All blue cod start life as female, they live in harems with a dominant male. if you remove that dominant male it triggers a change in the harem and a female, usually the largest, will change sex to become male. The biggest problem facing the sounds fishery is an over abundance of males to females due to over fishing.
