Hello friends
Today's recipe is very popular.
It is stuffed methiya keri (ભરેલી આખી મેથીયા કેરીનું અથાણું)
Pickles are special recipes as it requires perfect time management, extreme cleanliness and hygiene, perfect measurement of every ingredients . It is very traditional recipe, I learnt from my grandmother.
You can learn traditional Achar recipe with step by step and tips and tricks.
🌿 INGREDIENTS:
🍀For marinate mango
500 grams of small raw mangoes
5 tbs salt
2 tbs turmeric powder
🌿For pickle
50 grams of fenugreek split seed(methi kuriya)
50 grams of mustard split seeds
1 tbs asafoetida
1 tbs turmeric powder
5 tbs salt
3 tbs kashmiri red chilli powder
3 tbs spicy red chilli powder
300 grams oil
Method :
Wash mangoes properly.
Make 3/4 cut of each mango. Remove mango gutli seeds using knife.
Now mix 3 tablespoons of turmeric powder and 5 tablespoon salt.
stuff this mix into each mango cavity.
Rest these stuffed mangoes for 8- 10 hours.
After 8 to 10 hours all mangoes are found to be dried and there is salty yellow water in the bowl . Spread these mangoes on dry cotton clothes inside the room to let it dry further for 3 hours.
You can store this salty water in the fridge to use in another Aachar
Now for making pickle spicy masala we will take 50 grams of split fenugreek seeds (methi Kuriya) and split master seeds (Rai Kuriya) Crush each one in a mixer for only 10 seconds. It must be coarse crushed and not in powder form. Mix both these crushed seeds . Add one tablespoon of turmeric powder and one tablespoon asafoetida.
Now heat 300 gram oil on medium flame till bubbles created. You can use cotton seeds or sunflower oil. I have used sunflower oil. Add 1/4 th cup of hot oil on crushed seeds. They get sauted due to hot oil. Now mix well.
Add 4 tablespoons of roasted
,salt and 3 tablespoons of spicy chili powder + 3 tablespoons of Kashmiri red chilli powder.
Mix well .Spicy pickle masala is ready.
Now mangoes are dried on cotton cloth in 3 hours.
Fill the cavities of each mango with spicy pickle masala.
🌿How to store this stuffed mango pickle ?
Use a glass jar with a tight cover.
Wash the jar properly and dry under direct sunlight for 2 hours.
Make a layer of spicy masala at the bottom of the glass jar.
Now put and arrange these mangoes in Jar gently.
Now take the remaining oil which is now cooled down. Fill the glass jar slowly around the stuff pickle.
Now shut the lead on the glass jar.
Tie cotton cloth or white kitchen napkin on lead to prevent from outside air.
In this way the pickle can be stored for the whole year.
🌿Important tips 🌿
Store in an air tight glass jar.
The jar must be washed And dried well.
Put jar under direct sunlight for 2 hours.
Before using pickle shake every time.
Keep the split master and fenugreek seeds in the sunlight for 2 hours.
Dry roast the salt on low flame.
