I used to live in Australia. Some friends who owned a ranch invited us come watch a round up of water buffalo. These were wild, feral animals, and I've never seen creatures so fearsome, mean, and aggressive. It was a battle between man and beast, and at time, it seemed the beasts nearly took the day. On the way home to the States, we visited Laos. As our 737 neared the runway, a couple hundred feet off the ground, we flew over a road. I was looking down and spotted a little kid on the back of a water buffalo looking up at the plane. This boy controlled his tranquil, docile creature with only a length of string tied to a ring in the buffalo's nose. I believe water buffalo are the only animals with such an extreme difference between wild and tame. They are like two different species.

Its a trip how they get shaggy in cold weather. True Mozzarella cheese comes from them. The milk is super high in protein compared to cow milk and has a thicker feel from what I have read. I would love to try the milk.

Coming from India, I used both Buffallo and Cow milk in my life for a significant time, I feel Buffallo milk is way tastier than Cow's. Especially the butter. You get more butter from the buffalo milk and God that is one tasty butter. Buffallos are the main source of the Milk in many Asian countries from India to Philippines. And yes, they're very affectionate.
