There are two types of ginger: Tender ginger and Old ginger. The ginger she use here is tender ginger, which is different from the ginger we can buy in the grocery. The ginger we usually buy is old ginger and old ginger is spicy. Tender ginger has a mild spicy favour, and after pickle, the spicy favour gone.

Both are available in market :) my family usually buy the tender ones, we like to eat ginger slices. We know old ginger have stronger more spice to it, but it's usually just spice, since it's lots of fibre.

You got me with the title - Chinese food and ginger. Hell yeah. Beautiful visuals as usual. I cannot watch your videos without wanting to go to China. The idea of picking the ginger from the earth is so captivating and beautiful. Even though I'm vegan, I always appreciate cooking when a lot of care and thought has gone into it so thank you for sharing. You're a wonderful cook. It doesn't matter whether it is from a tree or a root, ginger is simply wonderful. It has so many benefits. In some parts of the world, people may not know how ginger grows. Maybe you could give them a break? Jeez!
