Watching you all eating away at the table reminded me of meals at my grandmas when we lived there as kids . Great , wholesome , home raised food and maybe a little bit of chaos with the dog hidden under the table bunting everyone for a morsel , everyone except my grandma as she didn't think dogs belonged where people were eating . One time in particular I had snuck Laddie in under the table where I was sneakily dropping him pieces of the dreaded , yucky loathsome liver . I hated it and was determined NOT to eat it . Half way through the meal my grandma got up from the table to get something and on her way back she spied all the hunks of liver I had been quietly dropping on the floor for Laddie to hoover up , except unbeknown to me someone had let him outside again before the meal had begun !! She was livid and I got to do all the kitchen chores for a week while my sisters and their Cheshire grins were off the hook .. After a lecture on making ends meet and being thankful not fussy she decided not to force me to eat IT ever again as it was better for one of the others to have it than me waste it !!! The good old days.... thanks for the memory jolt !!!

I grew up loving scotch eggs and was recently introduced to a variation I love even more. Instead of sausage you use sage and onion stuffing or whatever stuffing you like best. It doesn't stick to the eggs as well as sausage so you put them into the fridge to set. Finish off with dipping in eggs/bread/panko and deep fry. They are SO delicious and vegetarians will love you for them!!!

I know there's a risk associated with having your children online and the idea that it is somehow imperfect when they go "off script", ask questions, and change the course of your plan for the video, but I absolutely adore now seeing your babes in the kitchen and wanting to be a part of what is happening. All of the posts I watch most include the real day to day of people doing good things with their whole family. 🌿💚🌿

We roll ours in oats… and big rolls of sausage that we cut in rectangles to put around the eggs and pinch closed at the ends. And Scot’s always had eggs and sausage (chickens and pigs or lamb) we love them!

I love Scotch eggs! There’s a great little British pub here in Nashville that has them. I’ve always wanted to make them but my husband doesn’t like hard boiled eggs. I guess I’ll make a batch just for me. 😂

I've heard of Scotch eggs, but never knew what they were. Now I know and they look delicious! A good jolt of protein. It's so nice to see your family in the videos, all helping with the preparations and enjoying the meal afterward. You say you reuse the lard, but doesn't the fat retain the flavor of the previous food? I guess not..? I'm always learning from your content, though I'm not much of a cook. It's always interesting...thank you. :)

I now make my scotch eggs without breadcrumbs/panko, and there isn’t a great deal of difference . I also bake them when I don’t have time to watch over the fryer. Not so attractive but good enough.

You can strain the tallow after each use and it will last a little longer

Really have to make these! A few recipes for homemade sausages come from SRP=Scott Rea Project from the UK. Another variation on breadcrumbs came from chef Harpal Singh Sokhi from India: shredded corn flakes! I'm rendering fat from i.e. beef or bone marrow or also chicken and geese and... Greetings from the far north of Germany!

What is tallow?

Beef tallow is essentially rendered beef fat. In culinary terms, beef tallow is adjacent to suet or lard but has a special rendering process that makes it unique. What’s the difference between beef tallow, suet and lard? Firstly, “lard” is a term typically reserved for rendered pork fat sourced from pigs, although it can also describe duck fat. Tallow and suet are the terms used for beef fat, but you may also see them used to describe other types of ruminant animal fat, such as goat, sheep or elk. Tallow comes from the hard fatty tissue that surrounds organ meats, most often the kidneys and loins of the cow. Before it is rendered, this fat is called suet. Because it hasn’t been processed yet, suet has a slightly tougher and grittier texture than tallow. Suet is best suited for use in pastries, dumplings and pie crusts, where the texture won’t be noticeable.

While you can freeze Scotch eggs for up to three months, we don’t recommend it unless it’s absolutely necessary. The crispy crust will likely become mushy during the freezing and thawing process.
