Jamaican Spice is a favourite of mean and in this video I will show you how to make it. Enjoy!
Dry Ingredients:
1 pound 4 ounces all-purpose flour
2 1/2 tablespoons mixed spice (star anise, cloves, pimento)
1 1/2 tablespoons cinnamon powder
1 teaspoon nutmeg
Wet Ingredients:
3 ounces water
3 ounces malta
3 ounces stout (e.g., Dragon Stout or Guinness)
1 tablespoon vanilla
1 tablespoon molasses
6 ounces brown sugar
1/2 tablespoon yeast
2 tablespoons shortening
1/2 teaspoon salt

I love the history behind the bun, thanks for sharing. Growing up in South Africa hot cross buns were my favorite during Easter season, plus it was Fall then which is my favorite season. Will give this recipe a try.

Question for you Nick: Since hypertensive persons are medically advised to avoid alcohol, could the Dragon be substituted with an additional 3 ounces of Malta? If not, what non-alcoholic ingredient would you suggest?
