It isn't actually the same. A real ocean has water sources blocks everywhere, but this one only has water sources at the top. The rest is water flowing down.

If you build a small one of these in the end and walk behind it with frost Walker boots since there's no daylight in the end the frost Walker Ice won't break you can have a super long walkway to a big empty space to build an Enderman Farm

Imagine how useful this could be though. Making canals, protecting builds from griefs, building entire oceans. This is as much a griefing tool as it is a building one. Shame they removed the water source block bug though

You could turn it into a usable fire remover by adding another flying machine behind it which will fill each water source with a block, and then remove it. That way it would actually be a moving ocean, instead of an expanding ocean.

It wouldn't work. You need a solid block or another water source underneath to make an infinite source (that's what the quartz blocks are for). Good thing too.
