This is how I make and can low sugar blueberry jam with pectin. Pectin is used to reduce cooking time and to thicken low pectin fruits like blueberries. It has some possible side effects in some people when taken in large quantities. Why I use it? Because taken from the The Pioneer Woman newsletter:
Cooking for a long time can also affect the color and taste of fruit preserves-the mixture loses some of its vibrance and fresh fruit flavor. Using pectin can cut down the cook time drastically and preserve fresh fruitiness and color.
