Ingredients
1) Precut beef( rump or porterhouse) 1cm X 25cm X 4 cm
2) Safari biltong spice
3) Vinigar
4) Salt
5) Coliander
You can buy a full rump and cut it your self but removing the tendons etc takes a long time and stretch the overall time to more than 3 hours.
We buy Safari biltong spice from Ngunnawal IGA or Spaza Shop. You can mix your own spice with Coliander, salt ,peper soya if you are after a specific taste.
Biltong is made at room temperature without heat. In very humid areas a tungsten bulb can be used to add a little heat and reduce the moisture.
BIltong box should allow airflow but keep insects /pets way from the meat
Our box is
- Systema 40l box
- 6mm dowels
- Small piece of midgi proofing
- 12pc fan
Heat a large nail on stove and melt 6mm holes every 5 cm
Near the top of the box. leave enough space so that a computer fan can be mounted inside the lid.
Use a tent pole heated on the stove to melt vent holes one one side of the box and cover it with midge proofing.
Melting the holes make neat holes without causing the plastic to crack or split, which is often difficult when using a knife or drill.
Cut a large hole in the lid to mount the PC fan. you can also mount it on the side of the main box opposite from where the vent wholes where made.
