Greetings! Last weekend, my neighbor brought me about ten pounds of pears in a grocery bag from his son's property. He said his wife knew that I would do something delicious with them. Well he was right! After making a great pear upside down cake and eating some out of hand, I decided to make some slow cooker pear butter and can it up.
This is super simple and super delicious. I did not end up adding any additional spices aside from the fresh ginger it just didn't need it! Of course you can adjust this to your own preference if you like a bit more spice, but this is so delicious you might not want too!

Thank you for showing proper waterbath canning techniques, I have seen some youtube videos where they don't even have the water covering the jars. This looks great, out neighbors have plums and apricots .....they make wonderful butter as well. Love the free fruit!! Plus the pits can be dried and planted. I now have 5 trees each started. I will see which ones are the strongest and plant those out in the yard, and if they all look good I'll give them away...no way I would plant that many trees I would have rotting fruit everywhere! !! You can only do so much. I love your videos.

I love this! I've always made my pear/apple butter more similar to sauce, why not make it spread like "butter"!! Sometimes I forget to "make it like you want it"!! Canning is so much fun!!

This is exactly what we used to do with all those pears we used to grow in the yard with I was a kid. Really cool to see it done in a crockpot. Thanks Noreen!!

As you were spooning it over and over at the end, I realized that never in my life have I wanted a bowl of vanilla ice cream more (as long as I had some of that incredible pear butter!). lol

Thank you, Noreen. I’m going to try this tomorrow. Our local farmers market has a vendor with organic pears. The nice dark brown color seen here is from simply reducing the product, correct?

IMO, the reason you need to put your utensils in the hot water is that even though they're in your super clean kitchen drawer or cupboard greasy air can get in there (how that happens I don't know). You can never be too careful when canning food for YOUR loved ones! Am I paranoid? No but I have had food poisoning (once from a restaurant and once a friend's cooking) and believe me you NEVER want to experience that!

If you don't have fresh ginger, how much dried spice would you use? I never thought about 'pear butter' before. Thanks for the info. Looks really good. I can almost taste a hot buttered biscuit with pear butter and a cup of coffee.

Thanks for making this accessible to those of us without canning equipment. Is it possible to reuse jars from the supermarket in a water bath?

No you cannot reuse jars that have been used in commercial canning. Very unsafe. You must use proper canning jars for total safety.

ooooooo... love that you added ginger... how lucky to have a neighbor like that! you title should say MAKING and canning... :-) did you cook it at any time without the lid? could less sugar be added if desired? looks and sounds great noreen....

I had the neighbor across the street show up today and give me thirty pounds more of the most giantest pears you have ever seen, some are bigger than Micah's head!! Yes, I did cook it for about an hour with the lid just askew, to let the steam out. Yes you can add less sugar if you like but sugar does need to be added. I would not reduce the sugar by more than half.

Hi there, I was looking for a pear butter video and came across yours. I actually also though of using ginger as an additional flavour but used some crystallized or candied ginger instead. I am very new to canning and somehow missed the part about the quantity of sugar that you added and only added about 3/4 cup to my original 4 lbs of fruit (a mix of pears and apples). Is that sufficient for preserving it after water processing for 15 minutes (wide mouth half pint jars) or should I refrigerate the sealed jars after cooling? The finished yield was 4 and 3/4 jars. Thanks so much

You do not have enough sugar in yours. Always please follow a safety tested recipe to ensure that you do not make yourself or others sick. Additionally I am not certain about the crystallized ginger being a safe addition.

Just to be safe I will be refrigerating this batch, but in my opinion the fact that it was sufficiently acidified by the addition of 1.5 t of anhydrous citric acid ( equivalent to about 6T of lemon juice for approximately 3.5 lbs of fruit ) and also the half pint jars were water processed for a good fifteen minutes should make it safe. Idk why candied ginger would be a problem though

You should seek out a safety tested recipe. Not a recipe from the internet. The sugar is necessary for prolonged shelf life. Apples are very low acid. I am simply sharing what I recommend. I am not an expert therefore you should not rely on my advice.

How important is it to find a grate for the bottom of the pot? I'm having a hard time locating one.

For Canning it is not to be done without it. It is not an option canning racks are sold at most big box stores they sell canning supplies. Without the rack you risk the jars breaking from direct contact with the bottom of the pot. You absolutely need the rack. Non negotiable.

Go to the Ball canning site. They can show you how to make a grate for the bottom of the pan by using the lids. Not the ones that seal but the part you use to tighten the lids with. Its easy and cheap. I hope this helps.

No. You cannot use sweet potatoes. They cannot be canned in this fashion

No. You should never use unripe or over ripe fruit for canning.

Does this type of canning have the same shelf life as pressure canning?

You will want to do research on the difference between water bath and pressure canning. You don't need to pressure can jams and jellies due to the high sugar and acid content. If you are not familiar with the difference between the two types of canning then you should get a Ball Blue Book and read up on it before attempting to can anything. Thanks for stopping by.

Noreen, My sauce from my pears looks black, are my pears still good to use. I used asian pears.

I used fresh, home grown bartlett pears. I don't know how to answer your question because I have never used Asian pears before. Asian pears are very different from traditional pears. You may need to assess this situation on using your own judgement.

Noreen...can you make strawberry jam in a crockpot....I wanted to try to but im scared it won't come out ok...

No, unfortunately that is not how you make jam. The crock pot will not work with anything requiring pectin and the reduction of liquid. I use it to make some fruit butters, however that is where it ends. Jam is not a slow cooker process. You need to do it the way it is supposed to be done. It takes less than an hour. I usually use the recipe amounts on the insert of the package of Sure Jel Pectin. I wouldn't even try to make jam in the crock pot because you won't end up with jam and you will have wasted time, effort and money.
