7 ай бұрын

On this day we did our first Sunday Reset for 2024. Making bread and other bits in pieces in the kitchen. All to help with my plan of A year without the grocery store. I decided it is better to be as organized as possible for me to be able to succeed at my goals. It only took a couple of hours out of my day and I am so pleased I have done it.
Great Bread Recipe
2 cups of warm water ( add another 1/2 cup if you are using milk powder)
2 1/2 tsp of yeast
if you are not using milk powder add 1/2 cup of warm milk
1tsp sugar or honey
combine all ingredients and let the yeast bloom for a few minutes
add remaining ingredients
1/4 cup melted or soft butter
2 heaped Tbsp of milk powder if not using milk
six to seven cups of flour (sorry the numbers on my keyboard aren't working)
1 tsp of salt
Knead the dough with whatever appliance you use for dough.
let the dough rise for roughly an hour or double in size.
Roll the dough out in place into pan size (makes 2 loaf pans) or 1 pan and a doz buns
Let rise for a second time until doubles in size
Bake at 180 fanbake until lightly browned and the bottom of the bread sounds hollow when tapped.
Bagel recipe I used

The rose pan I used from Thermomix ( you don't have to own a thermomix to shop at the store

Pans that I use from amazon

Bread making from scratch is so incredibly satisfying and rewarding. And it so, so simple, and costs mere cents, and although there is “wait time”, while it rises, and while it cooks, the actual ‘work’ time is minimal. Plus it tastes so much better than bulk produced bread. And when still warm… ❤❤❤ I’ve never had a bread maker. They are totally unnecessary. I just use bread tins and an oven.

I plan on actually watching at home because I AM DONE WITH COMPUTERS FOR THIS DAY. UGH!!! LOL and yes, I would indeed like to see those pans...are they aluminum? I usually buy all my bakeware from a restaurant supply and it is always aluminum. My kids are going to be able to pass that stuff down to THEIR kids, it is THAT durable. I guess that's why restaurants use it. And I LOVE my Mason Cash bowls, I bought mine new, not vintage, but I've had them for awhile so perhaps they're vintage now...? HAHAHAHAHAHAHAHA

@@FarmersWifeHomesteadHi Stacey, just reporting back that the bread was really good! Thank you! A few oopsies. Firstly I followed the recipe and added 1tsp sugar, then while the dough was rising I watched the video again where you said one and a half tablespoons of sugar. Should I add more sugar next time? Or stick to the written recipe? Secondly I forgot to add the salt last! Thirdly, I made one loaf with the lid and one without. The one without had a lovely domed crusty top but while it was cooling it shrank back to flat! Do you know why? Despite the oopsies I'm calling this attempt a success and I'll be trying repeatedly until I achieve perfection. 😁

Yum, all your bread looks delicious. I froze some bread dough for pizza's and rolls for the first time and it worked and tasted just as good as fresh made dough. I love a crusty no knead recipe for sure. Oh and some pickled red onions or capsicums for a extra lil bit on the side. We have a couple of beehives so honey is usually available to sweeten my pickles. Sorry, I'm waffling!

The pans are amazing. If you do have a pan that sticks, I recommend that you put a tea towel over the pan after it comes out of the oven. Leave it on for a minute or two and it steams the bread. The bread will then slide out. Don't leave it in for too long or it will go slightly soggy. I hope that helps you.

I use my thermomix for all my bread products, the bagel recipe on Cookidoo is so good but probably not much different to the ones you made (although recipe has you boil for one minute each side and put some baking soda in the water) I make a double batch and freeze, so much nicer than shop bought. The baguettes are great too and we don’t buy them any more! I found my baguettes (I make four short ones, almost like tiger stick size) benefitted from slashing the top before I baked them 😊 I’m enjoying your videos, nice to see someone in NZ as it’s more relatable. Hello, the recipe is written in the description and it is 1 teaspoon sugar per recipe. I think I doubled the recipe in the video so that may have been what put you wrong. Sorry for any confusion.
