There are a lot of inquiries asking if it is possible to knead salt bread by hand, so I brought a video of making salted butter rolls by hand kneading๐
It's hard to knead the dough, so I made it easily and simply (it takes a long time) by folding. Just watch the video and follow along and you will succeed easily.

โช๏ธIngredients (7 pieces of 53g)
- 130 g of water
- 3g dry yeast
-175g strong flour
-25g soft flour
- 12g of sugar
- 4g of salt
(Note) I used unsalted butter instead of salted butter for the filling butter this time, so I added 4.5g of salt.
-10g non fat dry milk powder
-12g unsalted butter
-Salted butter 49g (7g*7ea) - For filling
โช๏ธHow to make
1. Add dry yeast to water and mix.
2. Put the bread flour, cake flour, sugar, salt, and milk powder in a bowl and mix until the ingredients are well mixed.
3. Add water with dry yeast to the flour and knead to form a ball.
4. If you can't see raw powder, let it rest for 20 minutes.
5. Add unsalted butter at room temperature and knead to penetrate well.
6. When the butter is completely absorbed into the dough, rest for 30 minutes.
7. Fold about 7 to 8 times. *Check the dough condition in the video
8. Rest for 30 minutes
9. Fold about 5-6 times.
10. 1st fermentation 40 minutes*The temperature of 26~28โ and humidity of 70~80% are suitable for the 1st fermentation.
11. Prepare butter for filling.
12. After the first fermentation, if the shape is maintained when you press the dough with your fingers in flour, fermentation is successful, and if the dough returns elastically, ferment more.
13. Divide the dough into 53g each and round it, and mold it into a water drop shape. And then rest for 20 minutes
14. Molding
15. 2nd fermentation 40 minutes*For the second fermentation, the temperature is 32~35โ and the humidity is 75~85%. Recommended. Butter may melt during fermentation if the fermentation temperature is incorrectly controlled and the temperature rises a little more.
16. Let it ferment until it doubles in size and shimmers when shaken.
17. Spray with water and sprinkle with a little pearl salt.
18. (Oven preheating required) Bake at 200ยฐC for 13 minutes. * Adjust the time while looking at the baking color.

โ๏ธWhat if I don't have skim milk powder?
It's best to make it according to the recipe, but if you substitute milk, add 100g of milk and reduce the water to 30g instead.
โช๏ธHow to store salt bread
Salt bread is best eaten the same day it is made.
Except for the amount to be eaten on the day, take it out of the oven, cool completely, and store in an airtight container or ziplock bag in the freezer.
When you eat frozen salt bread, you can enjoy it as deliciously as freshly baked salt bread by turning it in an air fryer for 6 minutes at 170 degrees. :)
