Let's make some homemade soft pretzels from scratch 🥣 Pretzel recipe with soft spoken instruction
Ingredients:
2.25 tsp active dry yeast (or 1 packet)
4.5 cups flour (600 grams)
2 tsp salt + coarse salt for topping
1 tbs sugar
1-3 eggs
1/3 cup baking soda (100 grams)
Melted butter for topping (optional)

never add salt to yeast. add salt to the flour. the dough will rise better. 😊

Something I learned recently is if you bake the baking soda in the oven beforehand it turns it into sodium carbonate which has a higher pH and you can dissolve this in water and soak the pretzels in that to get browner pretzels with more pretzel flavor 😊 if you search "pretzel sodium carbonate new york times" you can find the instructions for this! Highly recommend

One thing that will help your pretzels come out better will be more kneading. This develops gluten which is essential for all breads, pretzels, bagels, ect. After kneading your dough should feel pretty smooth to the touch.

Did you let the dough rise at all? Bulk fermentation and/or once you shaped the pretzels? Maybe this isn't part of making pretzels but I would think you'd at least want to bulk ferment.

Not an expert but I think the baking soda in the boiling water was the rising agent instead of the yeast, I don’t really understand baking sodas or why yeast was needed in this, but I assume since the yeast has already been added they would rise without boiling if allowed to sit.

PSA, please look up a pinch grip. You want to hold as many knives as you can with your thumb and side of your index finger. This reduces strain on your index finger and lets you use knives longer in life. Otherwise your index finger is being jammed back and causing joint damage over decades of use.
