INGREDIENTS
●2 cups sugar
●250g butter
●4 eggs
●2 cups flour
●2 cups milk
●2 tbsp apricot jam
●2 tsp baking soda
●1½ tsp salt
METHOD
On medium to low heat, heat milk and butter, don't boil
On a stand mixer/hand mixer, whisk the sugar and the egg, add apricot jam, and continue mixing
Add flour, baking soda, and salt into the mixer, and mix well until combined
Pour milk and butter mixture into the mixer and mix combining everything well.
Pour pudding mix into baking dish and bake at 160°C for 40 - 45 minutes or until skewer comes out with some bits of pudding cake pieces stuck on (make sure it's not wet)
Once baked, let cool for a few minutes while waiting, make the pudding sauce
PUDDING SAUCE
●100g butter
●200g brown sugar
●125g golden syrup
●250g cream
Weigh all ingredients into a pot and boil, let it cook for 2-3min
Remove from heat
Poke holes in the pudding. I used a fork and pour the sauce all over, distributing evenly
Make some custard (using custard powder)
