Probably because educated people have a considerably larger vocabulary, so using a larger variety of words and words not as commonly used can give the appearance of if not being smart, at least being educated. Specifically I believe someone who is in a situation where they feel like their competency is being questioned may subconsciously fall to the urge to sound more knowledgeable in the field in question, while someone confident in their skills won't have the same need to prove themselves this way. As a reference, The average person without an academic degree has an active vocabulary of about 30-40 thousand words in their native language, while someone with a masters degree actively uses about 150 thousand words. Interestingly, given how ubiquitous English is in academic contexts, even non-native English speakers with academic education tends to have a better English vocabulary than less educated native speakers.

That aside, this Nurti has FAR overstepped her authority (which, in fact, is pretty small if he got a good lawyer.) These people are NOT trained, Master's degree- level, licensed social workers. In some states they only have pissant 2-yr degrees in sociology from online or somewhere. I SUSPECT he's a dope dealer. That's why he's being evasive: he can't give a source for any $. I thought I was missing something since everyone kept inferring that Ms. Lopez and his mother attacked him because I didn't think "accost" had anything to do with physical contact. So I looked it up. "To approach and speak to, especially aggressively or insistently, as with a demand or request." And that's right in line with what my understanding of the word was.

So is this a civil proceeding? If so, every time he plead the 5th the judge should take an adverse inference against him as if he answered in the worst way possible for his case. If a criminal proceeding, the judge should hold him in contempt. At the least the judge should ignore all of his testimony. You can't testify only to certain things, either you answer fully and truthfully, or it doesn't count.

The case law on this gets wild at times. Depending on which case you want to read, you can either: remain silent about anything you didnt directly testify to OR be forced to talk about anything even tangentially related to what you testified to. Fitzpatrick v. United States holds that "The witness having sworn to an alibi, it was perfectly competent for the government to cross-examine him as to every fact which had a bearing upon his whereabouts upon the night of the murder, and as to what he did and the persons with whom he associated that night." What you cant be forced to answer is questions not relating to the testimony given. You saying "I didnt do X" doesnt open up the door for asking about doing Y, unless the facts asserted can be directly linked to Y. Theres also some weird procedural issues that entangle 6th amendment rights into this. For instance, a prosecution witness invoking 5th amendment rights may just be a violation of a defendants 6th amendment rights (which is why we see a lot of transactional immunity). And this gets even weirder when you realize the state itself, through the 14th amendment, can assert 5th amendment privileges (and 6th amendment challenges to those assertions, but thats less unusual). For what this looks like, see basically everything involving Mark Fuhrman in the OJ Simpson murder case. Typically courts find in favor of 5th amendment rights over 6th amendment rights, which is, again, why we see a lot of transactional immunity.
