Ingredients:
• 14 Manicotti
• 400g grated cheese
• Aluminum foil for baking
For the stuffing:
• 1 chopped onion
• 3 cloves of chopped garlic
• ½ red pepper cut into small cubes
• ½ yellow pepper cut into small cubes
• ½ green pepper cut into small cubes
• 1 eggplant (medium size) cut into small cubes
• 2 zucchini cut into small cubes
• 250g of minced meat
• 400g peeled tomatoes
• Butter 30g
• Olive oil 3 tablespoons
• Salt according to your taste
• 1 tbsp dried basil
• 1 tablespoon of Provençal herbs
• 1 tsp sweet paprika
For the béchamel sauce:
• 40g butter
• 2 large tablespoons of flour
• 1 L of milk
• 1 teaspoon of nutmeg (optional)
• Salt
Cook for 45 minutes at 350˚F/180˚C

• Papier aluminium pour la cuisson
Pour la farce :
• 1 oignon haché
• 3 gousses d’ail haché
• ½ poivron rouge coupé en petits cubes
• ½ poivron jaune coupé en petits cubes
• ½ poivron vert coupé en petits cubes
• 1 aubergine (taille moyenne) coupée en petits cubes
• 2 courgettes coupées en petits cubes
• 250g de viande hachée
• 400g de tomates épluchées
• Beurre 30g
• Huile d’olive 3 cuillères à soupe
• Sel selon vos goûts
• 1 c à soupe de basilic séché
• 1 c à soupe d’herbes de Provence
• 1 c à café de paprika doux
Pour la sauce béchamel :
• 40g de beurre
• 2 grosses cuillères à soupe de farine
• 1 L de lait
• 1 c à café de noix de muscade (optionnel)
• Sel
Cuisson 45 minutes à 350˚ F/ 180 ˚ C
