If you've been following ‪@marcyinspired1442‬, you know that many of my recipes include Hatch chile. That's because I'm a native New Mexican and chile is a staple in our diets. Depending on where you live, you may have seen the label, "Hatch chile." Hatch is a tiny farming community in southern New Mexico, about 40 miles northwest of Las Cruces, that is known for having the most flavorful chile. In fact, it's called the Chile Capital of the World. Tens of thousands of people make an annual journey to Hatch during the months of August and September because that's peak harvest season. That's when they load up on enough Hatch chile to get them through the year. You can buy it in 40 pound sacks and have it roasted and even peeled on the spot. After that, you just freeze it and use it throughout the year in all your favorite dishes. In this video I take you along as I get my fix.

OMG, seeing Sparky's burgs just cranked my hunger. Can''t wait for the festival. People are skeptical of the claims that Hatch chilies are the best - that is, until they actually try them. And if you're lucky enough to be introduced with a visit to Sparky's, there is just no going back.

I first came across hatch peppers a few years ago in Atlanta in my local market. I loved them. Believe it or not I saved all the seeds planning on planting them in GA. I never did. I now today live in Delaware and have a garden. Going through my seeds I found the packet of hatch seeds that I saved. I planted them and right now in my basement, waiting to go out when the weather warms a bit more, are 10 absolutely lovely, healthy looking hatch peppers seedlings! I am beyond excited!

Wow! That is so cool! Glad those seeds survived the move to Delaware and that you were actually able to plant them! I would love to see pictures when you move them outdoors. You know Hatch peppers are just Anaheim peppers grown in New Mexico and are only hatch if they are grown in Hatch. If you get a chance go to the Mission Valley Red and Green chili war in West Texas.

My mother used to teach in Pojoaque, NM during WWII. She learned to make ristras de chile and ristras de maíz for chicos. She say those were such special times. Many men were away at war but the families all pulled pulled together, harvest was a community affair.

I made it to the 50th chili festival this year in Hatch. I bought 80 pounds of roasted and use them all the time.

That's awesome. Even though we can find Hatch chile at the grocery store where I live, I love going and getting my chile in person & stocking up my freezer. Did you make it out to the carnival grounds? We didn't spend much time there this year and only saw the parade.

Awe. You're so sweet. My mom still helped me clean up and bag the chile, but we didn't shoot any more video once we got to her house. It was kind of a long day and we were tired. You should pay her a visit. I'm sure she'd love to see you.

Nothing like the smell of roasting Chile. I was born and raised in NM. When I was a kid we'd roast them in the oven and eat them on buttered bread.

I’ve been to Hatch and Grajeda’s on my way to Texas a couple of years ago…Unfortunately,,,it was off season and all they were selling were the” ristras “ which I bought for my wife and family…

I top my ribeye and sirloin steaks with a couple chiles every time I grill them. Deliciious. Frozen zip lock bags can EASILY last from one season to the next (12 months). You are a lot more likely to RUN OUT as opposed to have leftovers!

I now live in Florida making a September trip to the area. Will bring an extra suitcase to bring back to Tampa and grill up those Hatch Chilis. Can hardly wait!

Not sure where you live, but you should be able to find Hatch green chile in a jar. 505 Southwestern is a brand I now buy. You can also check the freezer section. There's a couple of brands that some stores will carry. Look for Young Guns brand.

I just watched Pati Jinich's new Frontera episode and she went to Hatch. I was surprised when they said that there is no "Hatch" chile kind, the most common are sandia and Big Jim. Is that right?

Hatch is just the name of the place that grows the best chile. There's something very special about the soil there. They grown quite a few varieties. People often save the seeds and try to grow it elsewhere, but you can no longer call it Hatch chile.

Wow! You're a long way from home! Unfortunately, I don't know of any farms that ship beyond the 50 US states. But, I would try contacting The Hatch Chile Store. I have a batch in my freezer as I speak. Local store gets them and if your not there when they show up, you wont get any. I make enchiladas out of them. I have already roasted them, peeled them and froze them

The same thing happens at the grocery store where I live. But just yesterday, my husband and I picked up our year’s supply in Hatch. We had them roasted, but decided to peel them ourselves this year. Enchiladas are in my very near future. 🤤

Thanks for watching! I get my chile from Grajeda's pretty much every year, because it's very good. But this was the first time I had it peeled. All I had to do was put it into the ziplock baggies myself, which I did at my mom's house, before driving back home. I don't think I'll have it peeled again, because I think the water being shot into those drums was too powerful and actually compromised the texture of the chile. The stems fell off, and I wasn't able to make any rellenos with them. I think I'll go back to having them roast it, and I'll peel it all by hand, even though it's a lot of work. I have not purchased chile from Pepper Pot, but all the businesses seem comparable in quality and price.

@@marcyinspired1442 Thanks for the info especially on their "water peeling" process. From watching it and seeing the chiles "after" they simply did not have the charred/roasted look and I believe not only the texture but the taste was likely compromised by blasting the skins off BEFORE they were fully charred/roasted and steamed for 30 minutes in the bag.For the past few years I have bought my chiles roasted/peeled and packaged in ziploc bags from Lujan Farms in Dons Ana but theirs were peeled AFTER all roasting BY HAND by a couple of older ladies at the farm stand so the chiles had the right texture and flavor. Unless I can find a substitute this year looks like I will be doing the back-breaking work of peeling a 30 pound sack myself. LOL. Keep up the great videos! Thx

@@marcyinspired1442 I was in Hatch a few weeks ago and the water blasted "peeled/ziploc bags" of peppers had ZERO chile flavor at Grajedas and the son of the owner even admitted that was the case...so I guess these are the "tourist" Hatch festival chiles. I ended up buying my chiles at the local HEB and thankfully my wife was nice enough to peel them for me.

Sparkys is the only place I know, for sure, has plenty of outdoor seating and is dog friendly. But you might check Trip Advisor or Yelp.

How do you clean and process your red chiles from old ristras?

I cut it directly off the ristra, just beneath the stem of each chile pod. I only cut what I'm going to use, until it starts to look scraggly, and then I just cut every pod off. Just take an ice cooler with you and be ready to peel them as soon as you get home. The color may not be as bright green, but they'll still be good.

I can’t find hatch chilis in California stores and a recipe I’ve been making calls for it. Someone told me Anaheim chilis are hatch chilis is that correct? Lol the recipe should be more spicy

Hatch chiles are grown in Hatch, New Mexico, whereas Anaheim chiles are grown in California. You can absolutely substitute one for the other, but the taste is a bit different, and Hatch chile tends to be a bit hotter.

It just depends on what kind you get. Hot, Medium, or Mild. Farmers know the difference and not only plant it accordingly, but sort it once harvested. Generally speaking, the more narrow and pointy the pepper, the hotter it tends to be. You can also take away some of the heat by removing all the seeds and veins. As for the heartburn issue, have you tried apple cider vinegar? I started taking it regularly a few years ago, and it's made all the difference for me. But definitely read up on it, first. Don't want anyone to think I'm giving medical advice. Lol

@@marcyinspired1442 As a rule of thumb the shorter the chile the hotter the pepper, You can get a mild and hot and an XXX Hot off the same plant.

Sad to say that wonderful Hatch Chili will replace kale, lettuce, bell pepper, habanero pepper...as the vegetable of choice....why? Because the market with make the Hatch pepper sky rocket! $5, $10 a pound?

I used to go there every year and buy those big bags of Chili's freshly picked from the farms in August I can't believe they're using water to shuck the chilies That's the biggest no no what it does is takes most of the flavor out of the chili and especially the chili When roasting and peeling chilies water is the biggest enemy I have this incredible urge for Chile rellenos right now And finding them here in Montana it's not easy
