CALLOS
Ingredients:
- Doña Elena Pure Olive Oil
- Oxtail
- Ox Tripes
- Pig’s Feet
- Garlic
- Onions
- Red Bell Pepper
- Tomato Paste
- Garbanzos
- Chorizo de Bilbao
- Brown Sugar
- Salt
- Pepper
- Bread Crumbs
Directions:
1. Boil ox tripe, oxtail, and pig’s feet with water, bay leaves, white pepper, and onions until tender then set aside. Slice them into thin strips. Set aside broth for cooking.
2. Heat Doña Elena Pure Olive Oil in pan then saute garlic and onion.
3. Add the ox tripe, oxtail, and pig’s feet.
4. Add chorizo de bilbao on the side and saute for a few minutes. Pour at least 5 to 6 cups of the broth and mix altogether.
5. Pour tomato sauce and wait for it to boil. Season with salt and pepper.
6. Put some brown sugar to balance the flavor of the tomato paste.
7. Put in the bell pepper and garbanzos and allow to simmer for a few minutes.
8. Thicken the sauce by adding a pinch of bread crumbs.
9. Serve while it’s hot. Enjoy!
