I'm gonna watch and see if it works. I've been making hot sauce for ten ysars now. Legally selling it doesn't seem easy in Washington state but let's go.

I love the video. You mentioned the copacker using their own sauce and down the road creating your own recipe. What are your thoughts on sending the copacker your own recipe and having them pack it? Thanks

Private label will put your label on their recipe. A co packers is a manufacturer that will use your recipe, bottle, label, and pack for you...and sometimes distribute for you.

The video with the Sweet Baby Ray's creator's son, he says he sent his new sauce off to be recreated by the copacker. While technically they do it, he had to send it back over 10 times for them to get the recipe right.

This breakdown sounds all good and all, but it accounts for buying your product from another vendor or utilizing a commercial kitchen. It's mentioned about using eBay and Amazon and other fulfillment centers, but you can't utilize those options through a cottage food business.... At least that's my understanding.

this business model can be very state has cottage food laws BUT your not making this or taking possession of it. It is premade and sent to the fulfilment centers for you are running the back end from home on a laptop and yes it can be profitable and work but it takes time

Can you do a video that covers the topic of product lab testing? For instance I am planning on starting in a commercial kitchen. So I won't be producing cottage foods. I only produce dry mixes which is dry spice blends. No one seems to want to answer my question about product testing. In other words am I going to have to send my dry spice blends off to a lab for testing for the nutrition panel and ingredients etc? I know that the people in the kitchen that are making pickles and salsa and everything like that have to send their products off to a lab but I don't know if I'm going to have to send my products off to a lab and nobody will answer my question. Nobody in the commercial kitchen even knows whether or not I am going to have to send my spice blends s to a lab for testing. Not even when I send this question to the state. They will not answer me either. They will not even acknowledge my email. So needless to say I'm getting pretty freaking frustrated with this whole thing. So I think it would be cool if you did a video that dealt with lab testing. I want to know if it's required by the state and if you had to do it for your dry spice blends. What is your experience with this? I think this would make a really good video. Thank you so much have a great day

I have never heard of "testing" spices. You need a business license, insurance, and lableing with igred: and allergen warning the FDA requires calorie and nutritional analysis ONLY when fast, cholest, carbs, and protein can be found present and mearuable. other wise I persoanlly have never heard of testing spices? just ensure you follow FDA labeling guidlines the FDA itself does not test anything they establish "guidelines" for labeling

The commercial kitchen that I'm working out of is saying that they don't know whether or not I am going to be required by the state of Tennessee to test my dry spice blends. They are even saying that the state will not like it if I'm using something like recipal to come up with my nutrition panel and ingredients list. I do know that people that are making things like salsas and pickles are having to have their products lab tested before they can sell them. I just didn't know anything about dry spices in that regard. I have just been using spec sheets and nutrition panels on bulk spices to come up with my ingredients list using recipal up until this point. Do you know of any other programs other than recipal that might be better than recipal? Thanks. Also I'm finding it difficult to get consistency with weight when filling my spice packets and I was wondering the best way to fill them to get consistency with the weight. I've been looking at a powder dispenser machine that's about 400 bucks. Again thank you so much for answering my question

For packing hot sauce in container do you need to use any type of suction device for air or no? Just the preservative right! I heard a lot of mix information about this want to ask a pro like yourself!

Cleanliness: Ensure that your containers and lids are clean and sterilized. This can often be done by running them through a dishwasher or boiling them in water for a few minutes. Filling: When filling the containers, leave some headspace to allow for expansion, especially if you plan to heat treat the sauce for longer shelf life. The amount of headspace can vary, but a common recommendation is about 1/4 to 1/2 inch from the top. Preservatives: If your hot sauce recipe includes vinegar or citrus juice, these ingredients can act as natural preservatives due to their acidity. Some hot sauce producers also use commercial preservatives. The need for preservatives depends on the pH of your sauce, the ingredients used, and how it will be stored. Sealing: After filling, the containers should be sealed while the sauce is still hot if you're using a heat treatment process. This can create a vacuum seal as the sauce cools, which can help preserve the sauce and extend its shelf life. Heat Treatment: Some producers use a process called hot filling or hot packing, where the sauce is heated to a certain temperature, then immediately poured into the containers and sealed. As the sauce cools, it can create a vacuum seal. This process can help to kill bacteria, yeasts, and molds that might be present, and it can extend the shelf life of the sauce.
