ingredients 1 cup (2 sticks) unsalted butter, room temperature, plus more for pan 3 cups all-purpose flour (spooned and leveled), plus more for pan 2 tablespoons finely grated lemon zest and 1/3 cup fresh lemon juice (from 2 lemons) 1 teaspoon baking soda 1 teaspoon salt 2 1/2 cups granulated sugar 6 large eggs 1 cup sour cream For Lemon Syrup: ½ cup fresh lemon juice ½ cup granulated sugar Directions Preheat oven to 350 degrees. Butter and flour a 12-cup bundt pan. In a medium bowl, whisk together flour, lemon zest, baking soda, and salt; set aside. Using an electric mixer, beat butter and granulated sugar on medium-high until light and fluffy, 4 to 5 minutes. Add eggs one at a time, beating well after each addition; mix in lemon juice. With mixer on low, alternately add flour mixture sour cream, and lemon juice, beginning and ending with flour mixture; mix just until incorporated (do not over mix). Spoon batter into prepared pan, and smooth top with a rubber spatula. Firmly tap pan on a work surface to level batter. Bake until a toothpick inserted in center of cake comes out clean; 55 to 60 minutes (if cake browns too quickly, tent loosely with aluminum foil). Let cake cool in pan 30 minutes, then turn out onto a rack to cool completely. (To store, wrap cake in plastic, and keep at room temperature, up to 3 days.) Poke holes all over the cooled cake, and brush with lemon syrup. If the cake does not absorb all the syrup at once, allow to sit about 20 minutes before continuing to brush with any remaining syrup. For the Lemon Syrup: Combine ingredients in a small saucepan. Over medium heat, whisk the mixture until all the sugar has dissolved.

A tip: place the bundt pan on a cookie sheet when you put in oven to make extra sure it stays level, considering the patterned design of the pan.

@brown bird Yes, the Americans have 10 different measurements in one recipe - cups, pounds, ounces and sticks and so on. Why can't they just use weight and weigh everything out in pounds? (They will probably not use grams anyway). They would make it both easy for themselves and easy for everybody else who wants to follow their recipes. Now it is impossible. I have to google up a ton of baking conversion calculators, only to find that they say all different things for the same amount. Like one cup of flour, it can be whatever grams. I found most calculators to land on 120-125 grams per cup, but I have seen both less and more. So when we Europeans are trying to follow an American recipe, it is more or less impossible to get it even close to accurate. I don't understand why they write recipes like that, instead of the easy way which is just to measure everything on a scale. 3/4 cups of flour, for example, how on earth can we measure something like that when we don't even own one single measurement cup? 3 sticks of butter, what the F. is that? Yes, it is possible to let any calculator guess it for us, but it is stupid. And then they want us to sift the flour. Should we measure it in cups that we don't have before or after sifting? What a revolution it would be if they used weight measurement instead. No, I have decided to follow the original pound cake recipe, which is by weight - 1 pound each (453 grams) of butter, sugar, eggs and flour. I just wonder what will happen when I add sour cream and lemon juice to that, if I would need more flour? We'll see. I'll try without first.

1 cup of flour is equivalent to 120gr. When it comes to flour it is always better to weight it out instead of using measuring cups. But if you don’t have a scale, you can just scoop the flour into the cup to make sure it isn’t densely packed.

I know this thread is 4 years ago and I'm sure you've worked out the grams. I'm in the UK and use a lot of American recipes. I ordered a set of American cup measures from Amazon a couple of months ago. I use them a lot. There is a slight variation from UK cup measures and American cup measures. It's not a lot but can mean the difference between success and failure. I've just made a lemon bundt cake, not Martha's recipe but it's turned out great. Just waiting for it to cool a bit before turning it out of the bundt tin - which I ordered from Amazon (Nordic) and had to wait for it to be shipped here. It's another tin I use a lot. Happy baking 😊

KitchenAid brushed nickle model, Custom Metallic series, cost more than the painted models but will never chip. They come with a polished stainless steel handled bowl. You can buy the glass bowl seen in the video at additional cost. In the video she used a flex-edge beater, that is a separate accessory too, I prefer using a Beater-blade when making a batter like this.

one can decrease the amount of sugar by 1/4 and not affect the texture in the batter. Not the syrup/glaze.

It is an American recipe, so what did you expect? Americans like to drown everything in tons and tons of sugar. Meaning unedible for everybody else than Americans and Swedes. You could probably reduce it by 25% or so.

leave out everything lemon and you have a basic pound cake.
