Dancing sometimes happens while actors are waiting for technical stuff to be reset. Reloading pyrotechnics, putting props back where they were before the shot, someone's getting their makeup touched up, replacing a bulb, troubleshooting a sound problem, etc..

Hemsworth trying to catch that hammer is still one of my fav mcu bloopers to this day The amount of times he almost gets it and misses lol One of my fav moments in the film too, the sheild and hammer returning together, thor n cap fighting side by side, iconic.

I don't think the hammer scene was shot on-location. Maybe the pyrotechnic scene WAS, but the actors were probably on green-screen set, and the pyrotechnic scene is added on the background in post-production, so they don't have the pressure of having to do it correctly in one take.
