The Maryland Blue Crab is a state icon. During this segment viewers follow along as the day’s catch is steamed, picked and processed by The J.M. Clayton Company - straight from the water to a crab cake near you. The five-generation family company, started in 1890, prepares and ships up to 2,000 1-lb. containers of crab meat each day.

I just stopped there today and got the canned lump and claw meat. The crab cake recipe is right on the can. Stays fresh for a year. I live 150 miles from the plant so I stock up twice a year. The canned you can buy all year long. My crab cakes are as good as any restaurant because the recipe is spot on.

I've picked crabs from 12yrs old til I was about 29 or 28. I've won two picking contest they held in poquoson Virginia called The SeaFest. I also pick between 60-80 pounds a day within a 10 to 12 shift. This is a painful and hard job!! I was called a fast picker and my body is paying for it now handling them cold crab sitting on the metal chairs concrete floors.

I'm sorry you're feeling the after effects of your hard labor in the crab picking industry. My uncles were watermen in St. Mary's County, Maryland - it's a tough life. It sounds like you took pride in your work, and were good at it too. Be well, & thanks for sharing your experience.

Man I got to get me a picking knife. Unfortunately I don’t believe that’s something that can be found. The skinny one like that. Believe I’m about to locate a bird beak/hooked 2” knife and grind it down thin an reput an edge back onto it. Theirs are either made that way over time from sharpening or bought a ground down on purpose to be that way.

Any luck finding one? Just came to ask the same thing. Believe I may be buying a 2” bird beak/hooked knife and grinding it down an putting a sharp edge back onto it after a making one. Theirs is either gotten like that from being sharpened so much over time. Or their purposely buying that specific knife and grinding it down thin an putting an edge back on it. Seems like eat enough an get a decent hang of. It works great for the purpose

Olivia, obviously angled question, many are paid by production... they return every year, so my understanding is it's a pretty good opportunity.

Funny you would use that comparision. But, it is by the pound. And the pay is a heck of a lot less than they deserve- you can bet your bottom dollar on that.
