INGREDIENTS:
For Red Chutney:
* Dry Kashmiri Red Chili(सूखी साबुत कश्मीरी लाल मिर्च) - 3-4
* Dry Red Chili(सूखी साबुत लाल मिर्च) -
* Garlic(लहसुन)
* Lemon Juice(नींबू का रस)
* Salt(नमक) - As per taste
* Water(पानी)
For Green Chutney:
* Coriander Leaves(हरा धनिया)
* Ginger(अदरक)
* Green Chilli(हरी मिर्च) - 3-4
* Salt(नमक) - As per taste
* Lemon Juice(नींबू का रस)
* Water(पानी)
For Papdi:
* White Flour/Maida(मैदा) - 250 Gram
* Salt(नमक) - As per taste
* Carom Seeds(अजवाइन) -Some
* Ghee(घी) - 1 Serving Spoon
* Water(पानी) - 1/2 Cup
* Mustard Oil(सरसों का तेल) - For frying
For Masala:
* Red Chilli Powder(लाल मिर्च पाउडर)
* Black Salt(काला नमक)
* Roasted Cumin Powder(भुना जीरा पाउडर)
* Black Pepper Powder(काली मिर्च पाउडर)
FOR SERVING:
* Papdi(पापड़ी)
* Potato(आलू) - Boiled & Chopped
* Tomato(टमाटर) - Chopped
* Ginger(अदरक) - Chopped
* Green Chili(हरी मिर्च) - Chopped
* Masala(मसाला)
* Red Chutney(लाल चटनी)
* Green Chutney(हरी चटनी)
* Sweet Chuteny(मीठी चटनी)
* Curd(दही)
* Coriander Leaves(धनिया पत्ती)
* Nylone Sev/Namkeen(सेव/नमकीन)
RECIPE:
For Red Chutney, in a mixer jar, put Dry Kashmiri Red Chili, Dry Red Chilli, Garlic, Lemon Juice, Salt and some Water. Grind it and take it out in a bowl. Chutney is ready.
For Green Chutney, in a mixer jar, put Coriander Leaves, Ginger, Green Chilli, Salt, Lemon Juice and grind the Chutney by using some Water. Take it out in a bowl.
For Papdi, In a bowl, put White Flour/Maida, a pinch of Salt, Carom Seeds, Ghee & add Water gradually & bind it with light hands. Make small and round balls of dough and roll them and keep one on top of the other. Prick them with a fork and then fry the papdi in the heated Mustard Oil and make them crispy.
In this way, tasty and crispy Papdi will get ready and store in an airtight Jar.
For Serving, take a serving plate, place fried Papdi, boiled and chopped Potatoes, chopped Tomato, Ginger and Green Chilli, some crushed Papdi, put some Spices like Red Chili Powder, Salt, Roasted Cumin Powder, Black Pepper Powder. Put some Red Chutney, Green Chutney, Sweet Chutney, Thick Curd, crushed Papdi and garnish it with some Coriander Leaves, Nylon Sev. Serve the very tasty Papdi Chaat.
