I love it. I have a M/B 560 on the way but I've had a Traeger nearly 6 years now and love that thing. With my briskets now I like a glistening black bark and what gets me there especially with a pellet cooker is a lot of Garlic Powder in my SPG and I go heavy. The powder gives the smoke something to stick to and the bark comes out soft and black. One of my favorite cooks and yes I sleep while they cook at night like you say.

I have 2 charcoal grills and the MB 1050 gravity smoker, cleaning is pretty detailed but simple, everything lifts out or slides out. The 1050..the only issue I had was , I dropped a wood lump in the ash bucket to add smoke and the lump caught fire and shot my temp higher than I wanted so I now use wood chips instead.. other than that 1st thing after set up, close the lid, go around to the hinge loosen them a bit and make sure the lid sits flat and retighten hinges, mine had a slight gap until I did this. It holds heat very well, I smoked a large briskit overnight and it took a almost the whole chute..I've found the 2nd shelf is best for smoking. Searing temp(700°) is achieved fairly quick.

I like to do my low and slow cooks on the second shelf and put a drip pan on the lower shelf. I've never had a problem adding a wood chunk or two to the ash catcher. Maybe the one you added was too large?

Great video, i just got the MB GS 800. I was concerned about the drip pan possibly blocking smoke to the brisket but it looks like it did great, maybe even slightly better than the Traeger.

The MB had a much better smoke ring and the party I had over all agreed it had better flavor. The drip pan worked great. Just make sure it's not covering the ambient probe on left side just above the bottom grate. Good luck!

How long from 10 pm until you took it off the grill did it take you? I’m cooking my first brisket on an MB1050 as a trial run before hosting people and trying to get a sense of when to have people over. If I put on at 10 pm, does it cook on the grill for 14-16 hours and then rest for 2-3 hours?

I took it off around 2pm the next day, then wrapped in foil and towels and let it rest in an empty cooler for about 2 hours.

I am torn between 2 Smokers, The Masterbuilt 1050 and the 36" Campchef Woodwind, I really like the Masterbuilt, but I think my only real concern is how well it holds it's temperature over a 12-14 hour cook and the Warranty being only 1 year compared to 3 years for the pellet units.. Great video, appreciate the info sir.

I would get the extended warranty. I haven't had any issues but I have seen people having problems with the electrical. The Masterbuilt 800, which is what I use in the video, will hold a 10 hour cook no problem at 225 with a full hopper. I do check it at 8 hours to see if I need to add fuel. My Traeger can get about 15 hours out of a full hopper at 225. The flavor from the MB is better...tastes like it came off an offset, if you've ever used one. I don't know much about Campchef, I've never used one..sorry! Thanks for watching!!

How would you say the price, pellets vs lump charcoal, per time spent cooking compares? I have read reviews that claim the master built doesn't burn all the fuel efficiently. @@jefferystensland1304 You get about 8-10 hours at 225 with a full hopper which takes about 16lbs of briquettes or 12 lbs. of lump. Compare that to a a 20lb hopper on the Traeger or a 40lb hopper on the recteq. They both burn about 1.5lb per hour at 225. Currently a 17 lb bag of BnB briquettes is 14.99 at Ace, a 20lb bag of pellets is around $20. So if you do all that math, the pellet grill might be about 1/2 the price to run with current prices...but they are both very comparable. I look for deals and buy briquettes 8-10 bags at a time when they are on sale. Hope this helps!!

I buy wood chunks about 2-3 inch squares. There is a newer fad where people are putting full splits in the chamber and surrounding it with briquettes. It looks very interesting but I haven't tried it yet!

Also, if you wrap it in foil, you may as well finish it in the oven because it's just baking at that point with virtually no smoke.

So you smoke at 225 for how long before you wrap in butcher paper. Then how long do you leave it in the smoker with buthcer paper.. before wrapping it with foil and putting it the cooler.

Cook to temp, not time. I go at 225 until the internal temp hits 165, then wrap in butcher paper. That could take anywhere from 6-10 hours. That's what all pitmasters say to always cook to temp, not time. Be sure to get a good temp probe. I love my fireboard set up. Inkbird makes a good one too.

Is master built a good brand? I know of weber, green egg, traeger. Wonder ing in terms of trusted brand how it compares to high end brands? Honestly for the price and what your getting seems like a good buy.

It's not as durable as the Traeger, but it is much cheaper. The flavor from the MB is better IMO because you can use real wood and charcoal.

​@@jefferystensland1304the way you think you will always make ok bbq. The fuel cost is about the same as a pellet smoker dude. Stop being so cheap if you want to produce good bbq. Some people need to learn the hard way like I did when I first got into this. I bought 7 different pellet smoker's. Later to find out. It's all the same besides the built quality but in terms of how it produce smoke flavors on your meats. It's all the same because of the fuel source. Pellet smokers does not make a good smoke profile flavors on your meats. You can Barley notice it.

Nice video Kenny and you are correct about the pellet grills giving a nice smoke ring. One thing though - we weren't at your house, so what did you all think about the flavor of each? Differences, etc.... Also, you can rest your briskets for 10 hours, in fact I don't rest them anything under 5 but usually 8..... The longer rest the better!! Nice work

They were both great but the party voted in favor of the MB. Your really can't go wrong with either, but the MB is about half the cost of the IW885, so I would recommend the Masterbuilt!

@@jayeshaw5705 the pink comes from the smoke ring created in the maillard process. It’s fully cooked but that’s why you get a pink smoke ring if you have successfully completed the process. Otherwise it’s all one color!

I'm torn between getting a Traeger and a Masterbuilt 800. I am leaning towards the Masterbuilt though because of a few things. I hear charcoal has the better taste and also the fact it can sear and get up to much higher temps for steaks, hotdogs, and burgers. Since you own both, how have they been holding up a year later?

I think Traeger is a better quality build and much easier to cook with. The downside of the Traeger is the price...if you can afford one, I recommend the Traeger. You might also take a look at the Recteq 1250. I'll be posting some videos with the Recteq soon, great smoker. For the price you can't beat the MB, but I have had some issues with the safety switches melting and had to replace the control panel. The customer service was great and sent me the parts right away. I've also had a hard time choking the fire a few times and even after I put the choker slides in my entire hopper burnt through and was gone the next day. So it was a waste of charcoal and wood. The MB flavor is better in my opinion. Honestly though, I think I use my Traeger and my Weber Kettles more than any of my other grills. I think if you have a Kettle and a pellet grill, you can pretty much do anything. Cheers!

Lump works great. You shouldn't use wood logs or match light briquettes. I mix wood chunks in with briquettes but many people recommend lump.

I like to mix the lump and briquettes together. Helps fill in the gaps between larger lump charcoal. And don't forget to layer whatever flavor wood you are using.

hello, great video, thanks! So one year on, what do you think of MB? Is it reliable? How's their customer service? I see one of your comment about electronics problems..... Everything sounds great about this smoker, but it wouldn't be worth the hassle if it's going to break easily. I'm all the way in Australia, I'd imagine it be even harder to try get some realtime support, not to mention replacement parts......

I have had problems with the safety switches melting and having to be replaced, I also had to replace the control panel but both times MB sent me parts right away. Luckily I have so many other grills I was able to finish the cooks on my other grills and didn't lose the meat. If you have a pellet grill and a Weber Kettle I think you can pretty much do anything. But the MB does produce great flavor. I love it...I kinda love all grills though haha

​@andyt3415 then you will never progress and stay stagnant. You will always have ok or average bbq using a pellet smoker. I use to own 7 pellet smokers wheni first got into the game. I was a newbie. Pellet smokers has problems as well just like anything that has power. Pellet smokers are super easy to use but lacks in smoke flavors no matter what brand of pellet smokers you have its all the same because it uses the same fuel source. I look back now. I laugh at myself and how stupid I wad thinking pellet smokers were the shit lol Wait till you try a masterbuilt gravity or a char griller gravity 980. It will change everything. It's the closest think you will get to a stick burner/offset smoker. Pellet smokers have a bunch of issues as well. Nothing is perfect. I had 7 different pellet smoker's and all had different issues and some the same depending on your luck. The igniter, control board, temp probe, auger system etc can go bad at any given time.

Traeger bark looks better on video. Maybe I'm mistaking. However, everyone tells me they prefer their masterbuilt since the switch. So IDK.

The Treager had a nicer bark because I wrapped the MB a little too early. I got confused about which probe was in which brisket haha. It happens!! They both tasted amazing, but the party voted in favor of the MB - flavor, juiciness and smoke ring. I think it was more of a tie, but because of the big price difference and the ease of using charcoal and real wood chunks I recommend the MB 800. You can't go wrong with either TBH!

I probably wrapped it a bit too early, it had a nice bark but I could of let it build more for sure! The MB cut also had a much thicker fat cap that I could of trimmed down more. The Traeger had a great bark as you can see in the video. Good luck, keep it meaty!

Great video, thanks. One question about the comparison of a gravity feed charcoal gill like this versus a pellet grill. I have both a big Rec Tec at our main home and a smaller Traeger at a vacation cabin. After 5+ years of use both are doing fantastic for me. But we all know the flavor of charcoal is what it is and it has me intrigued about one of these Masterbuilt grills. I've seen a few videos from others about cleaning the Masterbuilt, particularly if you wanted to do a hot cook (500º) steak sear after long, slow and more greasy cooks like briskets or pork butts. I use the foil on the pellet grills' drip trays approach with great success. Remove the grates, roll up the greasy foil and add more, and you are done as far as grease is concerned. All the videos I've seen on cleaning the Masterbuilt seem to be far more involved, and time consuming, mostly because of the extra pieces, diffuser box and metal trays inside the barrel that collect and trap grease and burned on crust. In practical use how much more time consuming is it for you to clean out and degrease the Masterbuilt compared to your Traeger? Thanks!

I use a drip pan for all of my cooks unless I am searing. Take a look at LSS mods. I have the manifold mod and it prevents flare ups and makes cleaning very easy. But like I said, unless I am searing, I use a drip pan so cleaning is pretty easy. I'll post a vid of how I have mine set up now and how I keep it clean. Thanks for wathcing!!

The super smoker setting? It only allows you to use it at 225 or lower. I like it for the first 2 hours if the cook. Then I turn it off. It’s a waste of pellets to use it the entire time. Meat only absorbs the smoke flavor the first couple of hours.

Another question, every brisket I did I started at 225 and it reached the stall within 4 or 5 hours. I always used the bottom rack. Do you think that’s why it went so fast? I keep hearing about the heating element dying in the Masterbuilt. Have you had any problems with it? I hear the Trager is reliable but I think the smoke ring looked better on the Materbuilt.

Currently my MB 800 won't start...it's completely dead. I emailed support, since you can't call anyone, and they said they were sending me a new power cord 4 weeks ago. I told them it's probably the control panel and not the cord but they want to try the cord first. So here I am still waiting, 4 weeks late...they said it would be 5-10 days originally. The only knock on the MB is the build quality. The Traeger is more reliable, but at triple the price that's what you would expect. The MB gives you the flavor of a true offset without having to babysit a fire, but the quality of the build is suspect. I'm not the only person I know that's had reliability issues with MB.

@@bbqguy8752 ouch, just like you mentioned you've heard it has electrical troubles! would you go to a non-electric offset charcoal smoker? Or is it too much trouble keeping temps? I only have a manual kamado and have my vents figured out to a T for consistent temps, but it is thick ceramic vs feeble metal frame of traeger or MB, so a different beast..

They were both fantastic. My family voted and the MB was the better taste of the two, but honestly I thought they both were damn good. The opinion I have is the MB is great for the price and if you like a real charcoal flavor. The Traeger is a higher quality build and much easier to use. You can't go wrong with either one. I will tell that the MB has had some issues and they had to send me a replacement controller but the customer service was great.

You wouldn't cheat and use pickling salt to get that "smoke ring" off the trager right???

Hi Kenny, just wanted to comment about your video. First I thought your video had a lot of good information, the fact that you compared the two grills was a fantastic idea. You had great information well presented. The one thing that was distracting was your transitions. You had flames popping up when you went from one shot to another, a knife slicing from one shot to another. All of those transitions were distracting to the information you were imparting. My suggestion is cut back on those transition images and use them sparingly instead of for every transition. It makes those transitions stand out like a sore thumb. Good work though I found your video very informative and I gave you a like.
