You won't have water in your mouth while looking at all metal spoons but by looking at natural things like leaf, your food and your hand. **Matar Paneer Pulao Recipe:** **Ingredients:** - 1 cup basmati rice, soaked for 30 minutes - 1 cup paneer cubes - 1 cup green peas (fresh or frozen) - 1 large onion, thinly sliced - 1 large tomato, chopped - 1/2 cup yogurt - 1/4 cup chopped mint leaves - 1/4 cup chopped coriander leaves - 2 tablespoons ghee or oil - 1 teaspoon cumin seeds - 1 bay leaf - 2-3 green cardamom pods - 4-5 whole cloves - 1-inch cinnamon stick - 1 teaspoon ginger-garlic paste - 1/2 teaspoon turmeric powder - 1 teaspoon red chili powder - 1 teaspoon garam masala - Salt to taste - 2 cups water - Lemon wedges for serving **Instructions:** 1. **Prepare Rice:** - Rinse and soak basmati rice for 30 minutes. Drain. 2. **Sauté Paneer:** - In a pan, heat 1 tablespoon ghee or oil. - Sauté paneer cubes until they turn golden brown. Set aside. 3. **Sauté Whole Spices:** - In the same pan, add cumin seeds, bay leaf, cardamom pods, cloves, and cinnamon stick. - Sauté until the spices release aroma. 4. **Add Onions:** - Add thinly sliced onions and cook until they become golden brown. 5. **Add Ginger-Garlic Paste:** - Stir in ginger-garlic paste and sauté for a minute until the raw smell disappears. 6. **Add Tomatoes:** - Add chopped tomatoes and cook until they become soft and oil starts to separate. 7. **Add Spices:** - Add turmeric powder, red chili powder, and garam masala. Mix well. 8. **Add Yogurt:** - Lower the heat, add yogurt, and stir continuously to avoid curdling. 9. **Add Peas and Paneer:** - Add green peas and sautéed paneer cubes. Mix well. 10. **Add Rice:** - Add drained basmati rice and mix gently until the rice is well coated with the masala. 11. **Add Water:** - Pour 2 cups of water into the pan. Season with salt. - Bring it to a boil, then reduce the heat to low, cover, and simmer until the rice is cooked and water is absorbed. 12. **Finish with Herbs:** - Once the rice is cooked, gently fluff it with a fork. - Add chopped mint and coriander leaves.
