I actually noticed that’s a steer not a cow. I actually used to go to a large butcher in Issaquah, WA long ago. They had pistachio liverworst. It was so good. Unfortunately I don’t know where it came from. Think I’ll see what I can find.

All that nice looking food harvested, canned, frozen, and made into meals. Tomato pie, and chicken pasta oh my!!!! Homemade expresso, sitting with your person, and listening to the rain......one couldn't ask for any thing better😊 Life is good!

I see the prosciutto hanging in the kitchen, garlic ropes hanging everywhere, baskets of fresh tomatoes and onions and fresh pesto! When that house gets warm it has got to smell incredible in there! Amazing!

I was in the house today working on freezing corn and I played your video where you took your trip across the country and found your new home, and saved your family. I actually got teary eyed a couple of times because I kept thinking, "if you only knew how well this turns out".

SO glad you made the comment about NOT putting Parmesan in the pesto. All the recipes I found called for it, so I was afraid to waste resources by making it without and finding out it wasn't good. Thank you so much!

I only add pecorino if I know it's gonna be eaten within a couple.of weeks. Not for long term storage.

I freeze my pesto in ice cube trays, then pop them out and store in ziplock bags. I’m the only who eats it here but sometimes I sneak it into a no-knead bread…and he loves it. Of course I haven’t told him what’s in it. LOL

The hardest working woman on the internet. Meg is a throw back to women of yesterday. Reminds me of my mother. She does a hundred things in one day and makes it look so easy. And best of all, she is appreciated in her family. So many times that is not the case.

Our Benito cat loved basil. He would skulk around the garden, nibbling basil bushes as he went. My mom would go out with scissors and paper towel, hiking for the basil bushes. And then the growling and swearing began. Because Benni would have nibbled EVERY leaf of basil. All of it. 😸

Ben and Meg... you two are awesome !! My husband and I love getting a coffee and watching your videos ! We are retired from homesteading now. we are 70 yrs old and the only thing we can handle is my container gardening and freezing veggies making freezer meals and salsa ... things like that.. I dehydrate my herbs and make my own spices .. which are so incredibly good !! much better than store bought !!! Your kids are so sweet !!! We love you guys .. We are also in NC in-between Durham and Hillsborough .... Take care !

I make basil pesto its one of our favorites .That looks like perfect basil ! I see your family loves it too. Because pine nuts are so expensive for my recipe I use walnuts and do not add cheese until ready too use also . Your children will always want God bless your canning season .😀

When my husband and I got married about 30 years ago his family made me pesto and I almost gagged I hated even the smell of it. Fast forward 10 years I was pregnant with our 3 son and I couldn’t get enough of it. Now it’s a staple in my house/garden. My husband loves when I make it from lemon basil!! We roast veggies and put pesto over it with pasta or rice. Delish!

I’ve been back in canning mode too. My 7 yo grand daughter’s impression is that “nana doesn’t use food. She puts it in jars and I’ve seen where she puts it.” LOL!! She doesn’t realize that she has eaten some of the food I put in jars 😊

Buggie did great! I just harvested my basil and put it in the dehydrator!!! Dang! I did leave the bases so that maybe I might get more. If I do I am making pesto! Ben, the way you described pesto is exactly how I feel about the fruit that I dehydrate. It’s a touch of summer on a cold winter morning when we eat it in oatmeal (strawberries, blueberries, peaches, apples, and cherries). We love pesto too! ♥️👍🤓

When I was little Pop would take me to gather pristine snow, sprinkle with vanilla and crumble in dehydrated strawberries. While we ate it he would remind me that the hard work of the harvest was being rewarded. Country folk are just blessed twice over to work with God and nature under azure skies.

Buggy’s entire being is NC to her core. Made in NC, everything she eats (99%) is NC. The bare feet in the dirt to planting to helping harvest is 100% NC. You guys rock. The gentlemen are growing up so awesome! Keep making vids for those of us who cant NC!!

I use pecans in my pesto, since I always have them here in Georgia, and we really like it. Never thought pine nuts were worth the price.

The opening was a very nice treat after a depressing day….it’s so nice to see the whole family involved with food prep…. I dehydrated tomatoes and made tomato powder to save room in my freezer….today I did watermelon, cucumbers, cantaloupe and chicken…… I’m filling Mylar bags and putting them into square five gallon buckets which I like better for stacking. Can you use your camper as a veggie storage? You could put the air on just to keep them cool enough to prevent rot…. Aren’t you using your freeze drier for the extra veggies for winter use? Homemade mozzarella, tomato and basil pesto on homemade bread….yum.

THANK YOU Meg & Ben this was the video my mental health didn't know it needed till I watched it. I have had a truly horrendous day on top of a pretty much the same few months. I believed I had finally broken. Then this video popped up in my notifications. Meg made gimbap or Kimbap (same thing different spelling) which is the Korean version of sushi. Unlike Japanese sushi, gimbap is made with cooked meat and veggies.. She did a great job rolling it since that’s usually the hardest part of sushi making. I didn’t get to plant anything this year for my garden. I also felt like what Ben had said, about time running out and feeling like he never got going on the garden. So glad to see your harvest of fruit and veggies so far… 🌿🍉🧄🌻🍓🍒🍋 I just came back to nyc🗽 from our annual family trip. My hubby, two children and I stayed in Gastonia, NC visiting my parents. We love visiting since it’s so peaceful and it’s a different change of scenary. We can’t wait for our trip next year. Meg, you’re such a inspiration as a wife and mother. I wish I had your energy to be in the kitchen as much as you ❤️ Ben, I’m so happy to see you and your beautiful children helping Meg in the kitchen and all that you do for your family in and outside the homestead. Yes we just got a well deserved rain. It saves me from having too water. Everything is finally coming in too can for winter. I noticed that both young children are watching your recipes being made. They will good help when needed. God bless you all for sharing.

I know I've said it a thousand times if I've said it once: it is pure joy to watch your family just doing everyday things! I started a file on my computer saving screenshots of things I find beautiful. You probably tied Good Simple Living in the first few minutes alone. This video was absolutely beautiful.

You must be closer to me than I thought. We had that storm hit about the same time. It wasn't as bad as what we have had recently but we still made sure that everything was battened down, head lamps charged, and animals all fed before it hit. I didn't get much of a garden this yr either. We are were y'all were 3 yrs ago. Trying to fix a home, do the animals and keep everyone in the family happy. So glad we made the move over here though. CA is so bad now. It's sad. But I miss the food and the beach. SC has amazing storms though. I love sitting on my porch and watch the lightning show. Peace and Love neighbor ❤️

Unsalted cashews are a good budget alternative in a pesto... Those basil plants gave me deep envy though - summer has been a bit of a non event here in Northern England! So true about opening something you made from your garden when in the depths of winter - restores the soul!
