Honningbrew Mead:
1/2 Cup Honey
3 Cups Water
1 tsp Brewing Yeast
1/2 Tbsp Lavender
1/4 Red Apple
1/2 inch Ginger, Sliced
Black-Brair Mead:
1/2 Cup Honey
3 Cups Water
1 tsp Brewing Yeast
5 Blackberries
1 Tbsp Rosehip
1/4 tsp Ground Cloves
1 Cinnamon Stick
Pinch of Salt
Juniper Berry Mead:
1/2 Cup Honey
3 Cups Water
1 tsp Brewing Yeast
1 Tbsp Juniper Berries
1 tsp Dried Yarrow
1/2 Tbsp Dried Hibiscus Flowers
Nord Mead:
1/2 Cup Honey
3 Cups Water
1 tsp Brewing Yeast
1/4 tsp Ground Cardamom
1/2 inch Ginger, Sliced
Zest of 1/2 Orange
1/2 tsp Whole Cloves
1 Cinnamon Stick

Just FYI, it looks like the airlocks are empty. Add sanitization liquid or a neutral spirit to them to prevent oxygen from getting in, thus "locking air" out. Will be trying the recipes!

Perhaps you could try Norwegian Kveik yeast. Kveik is a domesticated brewing yeast originating from traditional Norwegian farmhouse breweries. Kveik can be fermented at temperatures as high as 110°F, which promotes extremely fast and efficient fermentation times. Despite the high temperature, kveik does not generate off-flavors like fusel alcohols

After you rack the mead (stabilize it and transfer it to a new bottle), you can also let the mead age for basically as long as you want. It should become more transparent and the alcohol flavor should be less severe. My brother and his friends started a mead freshman year of college, and it aged 4 years before they drank it at graduation. Turned out super smooth

To stop fermentation you can boil water in a pot to 60 celcius big enough to put your bottles in and let it stand for 5 minutes to a half hour but keep the temp steady . And it will stop . Then let it cool down and put the bottles in the fridge this makes it les likely to ever start again but with the water bath the yeast is dead .

Even since watching this video I started Nord Mead and it’s been formatting for 6 days now and looks awesome and a nice dark gold colour from using 1kg of honey instead of 2 cups! ❤️❤️❤️

@@VideoGameMeals I started my Second batch of Nord Mead that’s almost 3 weeks and just finished the Jennifer Berry mead looks dark pink! Can’t wait to try the Jennifer Berry when it’s done on Good Friday! 😊❤️

I can't speak to these, but my brother made a basic mead that was delicious. Couldn't taste the alcohol at all, just tasted like... liquid sunshine.

How could oranges be in any traditionally North recipe, imo licorice which thrives in the cold weather and is more popular than chocolate in Iceland and the Scandinavian countries make more sense, but not as tasty as orange zest ofc.

i started the nordic mead today :D in a one gallon jug so i had to use more spices ofc :) Sanitize (follow instructions) heat up some water for the yeast and to mix the honey in. prepped spices. poured honey water in jug . filled with water and shaked it abit. took out a sample for meassure of suger and wrote everything down aaaand in with spice and yeast . airlock on and in a not warm or cold area with no sunlight :D LETS WAIT. smells amazing tho

Good job overall, great recipes, I'm defiantly going to try them but i noticed two things that is very bad brewing practice that could ruin your brew. 1. ALWAYS put liquid inside of your airlock, you don't want oxygen or any bugs getting inside of that mead. Too much oxygen will turn your brew into vinegar, or just a bad oxidation flavor that tastes like cardboard 2. Touching back on number one, you should never just pour your brew into another container after the fermentation, you are allowing way too much oxygen into your mead by pouring it, i recommend siphoning it, there are cheap auto siphons on amazon that are worth saving the brew. But if you're going to drink all of them fairly quickly, you really don't need to worry about oxidation. other than that, implement those 2 imperative brewing practices in whenever you guys make this, and you are reducing your margin for error hugely.

they didn't take a reading. But the abv would be roughly the same as wine. Mead and Wine are basically the same thing, just sway the honey for sugar and you would have wine,

It's nice, if you find that it might be too sweet, add the honey afterwards bit by bit, you can always add more after each taste

If you cool the mead after it ferments, a lot of the milkyness falls out and the mead gets clearer.

Collin is correct, it helps get rid of a lot of sediment but not all of it. When the mead stays stationary for over a day it will collect at the bottom of the bottle. Don’t worry though, it’s perfectly fine to consume 😁

When put over into new bottles, without adding the ingredients to stop fermentation, will the drink still ferment even with a sealed bottle? And if so, how long could one let it ferment? Would it be ok to let it ferment 3-6 months?

It will still ferment, but be careful when you open. It will pop like champagne!

Yes it will. I’d suggest at least pasteurising if you’re going to store them long-term, which can be done with just heat. Sealing them without killing the yeast will allow them to keep fermenting and, while this will make them stronger, will also cause a buildup of carbon dioxide and lead to what’s known as a “bottle bomb”

Yes that is absolutely fine! Be sure to follow any extra instructions given on the yeasts packet to ensure it is in its correct conditions

They’re sweet in comparison to other alcohols, very filling too. I’d say they’re more enjoyable in moderation. As for profile flavours here’s my descriptions. Honningbrew - warm, fiery and subtlety sweet. Kind of like ginger beer but a little sweeter. Black-Brair - Fruity and spicy, the least sweetest variety but still tasty! Juniper Berry - Perfect balance of sweetness and smoothness with a slight floral tone. too easy to drink! Nord - Christmas in a mead, need I say more?

I got everything from Wilko. They’re 1 litre swingtop bottles Airlock and bungs If they’re isn’t a wilko where you live try online. Make sure you put water in the airlock, this creates a barrier that will stop unwanted bacteria ruining the fermentation. Plus it helps identify the fermentation is successful due to bubbles passing through the airlock’s water barrier.

Really good, my favourite was either the honningbrew which had a ginger beer flavour and the other is the juniper which was smooth and sweet, easy to drink!

How much mead do these recipes make? Also when did you add the extra honey to bring back sweetness? Does it dissolve or do you need to heat it up again?

4 litres, that's 1 litre of each flavour. Add the extra honey after the fermentation, I did it at 2 weeks but the longer the fermentation the stronger the alcohol. When adding the extra honey, go by tasting and it can dissolve on its own with a gentle swirl.

@@MLGpromyass I’ve done it for 2 weeks fermentation and then bottled without the Camden tablets and it continues to ferment and it does get stronger but I didn’t test it after that. I imagine around 12% the only risk here is the pressure build up. Second time I did it I added the Camden and it completely stops fermentation, add it to the batch and wait a day before bottling. You could keep it fermenting without bottling for a few months if you wanted a stronger flavour, more safer :)

Your better off letting them sit for a couple months they will tast better im making a plain mead just honey water and mead and im letting it sit for a minimum of 3 months

I did the same with a plain one! Because these are better as a shorter meads the lesser time fermenting means the yeast hasn’t eaten all the sugars and keeps them sweet and easy to drink! Thanks for the comment

@@VideoGameMeals true but if you dont mind the wait my step dads friend made blueberry mead that he forgot about for 2 to 3 years and after tasting it he called it pantie striper mead due to the absolute deliciousness if your up to the wait

Letting a mead fully ferment, clear out, back sweeten and age is usually going to give best results. I find high alcohol volume meads need long aging process, at least six months for anything over 10 percent. For lower sessionable meads a month can be all it takes and generally a little carbonation helps. I've tried small samples after a couple weeks of many meads and always found more time improves overall quality.

@@VideoGameMeals another thing I've found is fruit and spice in secondary fermentation really pops out in comparison to doing it in primary. In primary fruit sours and taste totally different from original flavor profile.
