Today we're making Beef Stew, Chipotle Beef Soup, Chipotle Chicken Soup, and Chicken Corn Chowder! Try them all, then make more of your favorites!

Soup Sampler #1 Ingredient prep:
(Makes 2 pints each: Chipotle Beef Soup, Chipotle Chicken Soup, Beef Stew, Chicken Corn Chowder)
2 2/3 cups trimmed beef, cubed (about 1.25 lbs trimmed)
2 2/3 cups rotisserie chicken, cut in large chunks (about 1 medium rotisserie chicken)
2 cups chopped bell peppers (red, orange)
6T seeded and diced jalapenos
2 cups diced onion
1/3 cup, sliced carrots
2 cups diced potatoes, peeled and water soaked
2-8 tsp chopped chipotles in adobo sauce
¾ cup corn kernels
12T peeled, diced tomatoes (3/4 cup)
2 to 2 1/4 cups beef broth
2 ½ to 2 3/4 cups chicken broth
3 tsp salt
2 tsp steak seasoning
1 tsp garlic powder
1 tsp smoked paprika
1 tsp cumin
1.5 tsp black pepper
½ tsp dried thyme
Divide ingredients among 8 pint jars as directed in recipes below. Process in pressure canner for 75 minutes at the appropriate lbs/pressure for your altitude. Do not use the processing time for “soups”.
If preparing quarts instead of pints, double each recipe per quart. Process in pressure canner for 90 minutes at the appropriate lbs/pressure for your altitude. Do not use the processing time for “soups”.

Chipotle Beef Soup (per pint)
2/3 cup (about 5 oz) trimmed beef, cubed
1/2 cup chopped bell peppers (red, orange)
1T seeded and diced jalapenos
¼ cup diced onion
0.5-2 tsp chopped chipotles in adobo sauce
1T corn kernels
2T peeled, diced tomatoes
1/2 cup beef broth (to headspace)
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp smoked paprika
1/4 tsp cumin
1/4 tsp black pepper
Chipotle Chicken Soup (per pint)
2/3 cup rotisserie chicken, white and dark, large chunks
1/2 cup chopped bell peppers (red, orange)
1T seeded and diced jalapenos
¼ cup diced onion
0.5-2 tsp chopped chipotles in adobo sauce
1T corn kernels
2T peeled, diced tomatoes
1/2 cup chicken broth, plus more if needed to reach proper headspace.
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp smoked paprika
1/4 tsp cumin
1/4 tsp black pepper
Chicken Corn Chowder (per pint)
2/3 cup rotisserie chicken, white and dark, large chunks
1T seeded and diced jalapenos
¼ cup diced onion
¼ cup corn kernels
1/2 cup diced potatoes, peeled and water soaked
½ tsp salt
¼ tsp pepper
½ to 2/3 cup chicken broth
Beef Stew (per pint)
2/3 cup (about 5 oz) trimmed beef, cubed
1/6 cup diced carrots
¼ cup diced onion
1/2 cup diced potatoes, peeled and water soaked
1 tsp steak seasoning
2T peeled, diced tomatoes
¼ tsp dried Thyme
1/3 to 1/2 cup beef broth

I agree with Lisa, MORE SOUP RECIPES PLEASE. Your site is one of my favorites!!! I just ate the Chicken Corn Chowder and it is EXCELLENT!!! I also made all of the bean ones. I am just starting to eat my way through the meat soups and will work through the bean ones next, to see which ones I will make more of. It is also just my husband and I and I LOVE the small batches and the individual recipes. Perfect for the winter nights that are coming. Great job and thank you sooo much for your hard work.

Ok, so this is my second comment. I’m a fairly new subscriber, and just want to commend you on your content. You are doing things that are unique to other content creators, so I’m finding myself at the beginning of a big binge watch! I love the name Carter (it brings to mind the old show Designing Women ♥️), and I have a dog named Izzy! So far, you’ve inspired me to dry pack can potatoes, bacon, and these meals in a jar! You are a wonderful teacher, and your kitchen is beautiful and perfect for the content you’re creating. My kitchen is the size of a postage stamp, and I find myself being overly ambitious regarding how much I can reasonably accomplish🤣. Again, thank you for your creative content. ♥️

I've had a dehydrator for probably 10 years, and a pressure canner for over 25 years, and never used them, until I binge watched your videos! I pulled out the dehydrator first, and made fruit leather from Aldi sugar-free applesauce, and the apple taste was so intense, I made some to take to my 3 grandsons in Michigan, who live about 5 hours away from us. I also had my husband pick up some frozen mixed fruit (peaches, pineapple, strawberries, and mango), and I separated each fruit, putting one kind on each tray. I did it with frozen fruit, so I didn't know how it would turn out,, since people online warned against it. It took about 15 hours, but they turned out great! The peaches were my favorite, and my grandsons loved them. I dehydrated some fresh pear peeled slices and peeled apple slices, since those fruits can off our fruit trees, and the skins had some bug damage. (I used the undamaged peels and cores to make pear/vanilla and apple/cinnamon jelly.) The pears, dehydrated, are my favorite of all the fruits I've dehydrated! The flavor is so sweet and the pear flavor so intense, I kept the pint-sized jar for my husband and me!!! As for the pressure canner, I had a half of a pork loin I needed to use, so I cut it into chunks and put in quart-sized jars, with a teaspoon of salt in each one, and poured beef broth over to cover the meat, making sure I de-bubbled. I was nervous, and kept rereading the directions on how to use it, but it was straight forward, since I've watched so many canning videos. I ended up with 3 quarts of pork, for pulled pork sandwiches, and 3 quarts of water, since you shouldn't run a pressure cooker with fewer than 4 jars. I'll likely open one this weekend,to see how it turned out, and to make pulled pork sandwiches. Next time I do this, I may can it in the BBQ sauce or in the SC mustard BBQ sauce, that is my favorite. Since I don't do big batch canning, I will be looking for an electric pressure canner, so I can "set it and forget it", and not worry about being in the kitchen to watch for steam, etc. Thanks for lighting the fire for my enthusiasm of canning! Jams and jellies are my first love, but meals in a jar, sounds promising!

I made 6 pints of the chipotle chicken today! I made a sausage skillet yesterday that the husband scored a 9/10 so now im going to can up 6 pints of those! Recipe: Browned ground sausage Cubed potatoes Onion Pepper relish Tomato trifecta Salt Pepper Garlic powder Onion powder Red pepper flakes Italian seasonioning Milk and cheese to be added later I measure from the heart lol but things were proportioned how one would expect with a soup/chili. Mine turned out almost the consistency of chili.

Great, Jayme! It is a bit of a mindset shift, but for me, it is so worth it. I really find that my pantry doesn't feel well-rounded unless I have single ingredients, meals in jars and condiments/flavor additions.

I use turnips as a substitute for potatoes. Can’t tell the difference. I am on a low carb lifestyle. Thinking about canning. I use to can Salmon with my grandparents on the Klamath and pick blackberries. You’re inspiration

I have been thinking about making meals in a jar for a while but most recipes seemed bland. These look great. Spent my afternoon making these. It was a pleasant experience because it was so organized. This is my second season pressure canning. The electronic canner is a game changer. My jars are processing now. Can't wait to try them!

I made some chili and zuppa touscanna soups for my pantry, 4 pints of each, I left out the pasta in the chili and I left the cream out until reheating to eat the zuppa. Such a good feeling to be canning several things a week now.

Hi Carter,I've been watching you for a long time. To reduce the fats in your soup, have you tried partial searing your beef before putting it in your jars. I let my beef cool before adding it to the jars. I had good results doing it this way. Keep up with a great channel.

I was sitting here watching you and thought oh my goodness these would be great recipes to just freeze dry all the ingredients and put them in the jars. Of course you’d have to have a Freezedryer. But this would be some awesome recipe to have freeze-dried meals on the shelves.

Oooh, thank you for sharing this! I'm gathering recipes for meals-in-a-jar and hope to start on them in a few weeks after my garden canning is complete. These all look delicious. I will probably do them in quarts for us..,.dinner one night and leftovers for someone for lunch the next day. I love the idea of having one night a week when I can just open up a jar for the two of us, slice up some bread or grab some crackers and cheese, and we're good to go! Blessings, Marie

Awesome video!! Couldn't have come at a better time, thank you, Carter! My elderly dad lives 3 hrs away from me and I try to bring him as many easy or ready to eat foods as I can before winter. Today's project is to can chicken soup in pints...now I'm thinking I also have chuck in freezer, will be adding beef stew to the todo list!! Absolutely love the sampler canning since sometimes I don't have enough for a canner full of this or that.❤😊

I pressure canned both chicken and beef stews. I made chicken pot pie and it works great. I make pie crusts and freeze a bunch. Easy meal.

And an example of using frozen bagged tomatoes as I have done here. (mostly due to .. dear God I have a lot of tomatoes, what can I do to save them? I have no time to think.) Just recently found your channel, and love your style!! So much so, I have 16 pints of soup in my canner!! 8 each of turkey corn chowder and turkey chipotle soup. I replaced the chicken with turkey, as I had so much roasted and was excited to use it in this manner rather than to freeze it up. Also excited as all the veggies to complete the soups came from my garden!! Im going on a road trip in a couple of months. Im canning up beef stew and looking for other ideas. It is such a hoot to have good meals that can be eaten hot or cold, no refrigeration, no shopping, no worries....thank you for the great recipes

Your soups look so much more appetizing with the amount of items you add to each jar. I like your soups they look great!! A lot more Appetizing than a soup with 3 items in it. You add spices more than just salt and pepper also. Thank you for these videos!!!

Oh my goodness Carter! Just the video of instructions I've been waiting for ❤ Over here in Northern Ireland it's hard to get good advice/tutorials on canning, which i started a few months back. So far it's been the usual vegetable canning to get me going. Now i can make proper chunky soups, yay! I made the "your choice" soup and didn't like that i had to add to thicken it up. This will be a game changer for me. Thank you so much xx

Another winner winner chicken dinner! I just canned 6 pints of the corn chowder. Cooked a small batch before canning some, I actually filled a pint jar like I was canning it, then dumped it out and cooked in a pan on the stove, of course had to add more chicken broth as it cooked for 75mins, and it was excellent! I don't care if it has carbs! Never would've thought of making corn chowder until I saw your video. Thanks so much! this is now 2 more types of soups added to my pantry, I canned some of your Italian bean soup from one of your other videos- best ever! I love the fact that I don't have to add anything to them, just heat and eat. Your beef stew is next. Not a fan of chipotle but may try the other two soups with just using paprika.

Oh my Carter! ❤❤❤❤ Idk if I'll ever be that organized to do samplers...lol BUT, i always make way too much of every soup or stew...enough where 7quarts are being canned after the initial meal. I still have at least 10 left over from last year and here you are with these new recipes. The few cold snaps in Illinois has created my desire for comfort food and soup/stew with homemade bread is my go to. Going to make the chicken corn chowder for sure. I love corn chowder and yours sounds delish!!! @@growandpreserve I also do that, but nice to have little ones also! Today, I ventured out and made Horseradish! Yes I did it outside until I jarred it up and put it in the steamer canner (water bath). I did 8 little jars and I saved the left over juice and canned that too. Have you ever shown your canning room on videos? If so I missed that. Some people don't like to show that part, and that' ok. Keep canning and showing us how you used things you have canned up for meals! I am trying to learn how to mix my own spices now. Greetings from Western, N.Y.

Wonderful idea of a soup sampler. One way I get around cubed, cooked carrots, which my husband loves and I don't, is to shred the carrots. They impart a wonderful flavor but no little cubes for us non carrot lovers. I've also used hominy in some recipes in place of corn. It can make a dish a little heartier. Looking forward to sampler 2!

I canned the chicken corn chowder, the Chipotle chicken soup, the southwest bean soup, and the Italian sausage and white bean soup. As a sampler canning last weekend. We have tried the Italian sausage one, and it's delicious very flavorful. Can't wait to try the other 3.

I’m going to try using the rotisserie chicken as I agree that chicken gets dry. The only time it doesn’t is when I can legs/thigh with skin and bone. They stay super moist. I’m also thinking of trying 1 thigh pouch breast meat and see if that will keep the breast moist. Love soups on the shelf. So convenient and so much better than store bought.

That chicken corn chowder looks best, to me. I’ll be using it as a blueprint for my own version. I love my tools; a few months ago I bought my first (maybe only, due to the price) SHUN, Damascus steel blade ( high maintenance though, due to the steel *it will “rust” if not washed and thoroughly dried after every use*, but is scalpel-sharp due to a 16 degree edge as opposed to the standard 23-25 degree edge. ALSO, due to hardness it’s also brittle; no hacking through bone😊 I’m going to do aji Amarillo and ground white pepper instead of jalapeno in the c/c/c turmeric and tarragon . When reheating I’ll add a splash of heavy cream. Should be golden, savory and I love the smell/taste of tarragon. I find it goes well with, not only beef, but yellow vegetables like squash as well, when the base flavor is chicken

Carter, you just made this teacher’s day with this video. Having jars of soup in the classroom desk is going to be an amazing change from my usual 1 cup frozen meals. I’m going to make 16 wide mouth half pints from your recipes this very weekend. I presume a 75-minute processing time as well? I don’t know why canning soup didn’t occur to me sooner!? I've been trying to figure out how to do the chili con carne for about 3 months now but every recipe I found was suitable for being cooked in pressure cooker but specifically stated not to pressure can it so I am getting bummed out cause I really want some on my shelves. Also I have been given a huge can of clams but definitely don't yet know how to make shelf stable soup with it. I've been skittish to make a milk based chowder because of the statements that milk should not be canned but I want a complete meal in a jar since I don't always have milk or similar when I am craving soup. Thank you 💕😊💯👏

My husband loves chicken noodle soup (I don’t lol) and I love veg soup (he doesn’t). I know you aren’t supposed to can noodles but I can tape some precooked noodle to his jar! 😂 I want to try your sandwich meat canning too.

I make soup 365 days. I don't understand how or why soup is mostly served in winter. Our homes are basically kept at around 68 degrees all year. So summer 68 degrees is the same as winter 68 degrees. Got my point? :) I only use dark meat chicken and it is NEVER dry. I love all those different soups. I must try them, thanks for sharing. I just started to do pressure canning. I love your varieties. Thanks so much.

Hey, Rose! I might be moving in with you during Summers. ;-) Our "compromise" Summer cooling temp is too high for my liking! I think many of us think of soup as "warming". When it's 95 degrees outside, I want cold and light. Welcome to pressure canning!
