My grandmother always made something she called Chinese chicken when i was little. My grandmother is gone for about 10 years and I still make her Chinese chicken for my sons who are now 15 and 19. It’s so easy, budget friendly and it’s so easy to feed a few or feed a crowd. 3 cups cooked rice. You can cook it in water or chicken broth. 2 cups cooked chicken. She would always stew her chicken to get the broth to cook the rice in. I on the other hand get lazy sometimes and buy a rotisserie chicken and a box of broth. Scallions, soy sauce and peanut oil. You put the cooked rice in the casserole dish spread out. Add the chopped cooked chicken in the center of rice. Top chicken with chopped scallions. We like a lot. Hear about a 1/4 cup peanut oil until the smoking point. Pour over scallions so they sizzle. Drizzle soy sauce over the entire casserole. As much as you like. You can also add more at the table. Stir it all together right when you’re ready to serve. Great as leftovers as well. So easy and so cheap. Especially if you already have leftover chicken, rice and broth. The only thing you have to buy fresh then are the scallions. Enjoy!!

I grew up in a very large family and one thing my mom always did was have some type of bread at every dinner. She went through phases where she’d make yeast rolls or bread for a year or two, sourdough for a bunch of years, got into Bisquick dropped biscuits for awhile and if she didn’t feel like using the oven, she’d put out store bought bread. It didn’t matter what we were having for dinner, there was bread and butter on that table.

You definitely need to try my go to of them cottage cheese and noodles with butter and onions. It’s so easy and so good. My 6 year old son actually eats it and I get protein in him through the cottage cheese. It’s a great comfort food too. It’s perfect on a cold night or for busy summer nights. I’m from the coal region of PA and we eat a lot of pierogies, and not just packed Mrs. T’s….homemade ones. This recipe is supposed to be considered “poor man’s” pierogies. I just threw the ingredients together one day, when I didn’t know what to make, and everyone loved it. I always have noodles and cottage available as my pantry staples.

We make something similar to what you do except we would fry bacon and chop it and make the cottage cheese and noodles and butter and mix it all up it’s delicious

Here's a recipe for TEXAS SALSA. 1- large can of whole tomatoes (20oz ) 1 can of Rotel w/cilantro and LIME juice 2-Tblsp cumin 2- Tblsp garlic powder Salt and pepper to taste 1- sm. Can of chopped green chilies 1-6oz. Can of tomato sauce 8oz's of Tomato "Juice". 8oz's of water 1/2 - med. Onion 1-2 whole jalapeños 1/2 lemon 2/3 cup of fresh cilantro Put everything in a blender and blend until smooth (or grainy). Pour into 3 pint size ball jars or whatever you have that's clean and refrigerate. Will last months in fridge. Oh, juice the lemon, not the Rhine. I came up with this recipe many years ago. NEVER had one bad reaction to it. Even when I went to see my son in Ohio, he and my daughter n love requested I make it for a get-together later that day. My in law took one bite and said "That tastes like TEXAS"! I promise you will love it ! PS. If you can't find the Rotel with lime, just add the juice of half a lime along with the lemon.

The Hamburger Pie is almost exactly how we made it growing up, sans cheese. It is definitely a good budget meal. Great job counting, Julian! I can count to 100 very quickly, too… 1, 2, skip a few, 99, 100! 😉

My family has been making and loving Hamburger Pie for five generations now! It's a real crowd pleaser too! I think that my Grandmother had originally found it with Campbell's soup recipes in the 50's.

I made that for my kids as well. I added Worcestershire to the meat mix for great flavor. We called it shepherds pie.

I keep the left overs of my veggies and the left over of any meat and use that with spices in a stock pot let it boil simmer and fill canning jars. So good

Tomato gravy with smoked sausage over rice. start with the holy trinity, add your sliced smoked sausage and brown, then add fire-roasted tomatoes make as. much or as little as you want. but at least 1 can with Tomato soup. I usually make a double batch. Serve with rice and we also love cabbage as a side with it. Don't forget to season well and a little bit of sugar is optional to cut out the acidity

So in college a roommate of mine made a hamburger pie that actually had a pie crust. Brown up the hb with onion drain grease off. Add gravy ( she used a jar but make or whatever) then add black pepper to taste ( heavier is pretty good though) & chopped dill pickle chips! Add the top crust and bake! And it’s really pretty good!!!

We would make stuffed chicken enchiladas using flour tortilla. Using shredded rotisserie chicken, macayo’s enchilada sauce( 1 lg can) shredded Mexican/fiesta cheese blend, Spanish/ taco rice( your preference) & the flour tortillas. Put a light layer of sauce on the bottom of the casserole, stuffing the tortillas with rice, chicken & cheese. Putting them in your casserole dish( we prefer the glass ones) add the rest of the sauce on top as well as extra cheese. In at 350 for 15/ 25 mins( until cheese is melted ). We serve with a side salad & refried beans. Also tortilla chips with guacamole and salsa on the side.

In my town in canada, ground turkey is more expensive than ground beef. I would still go for turkey to save on fat.

I made a mac n cheese the other, had some hot dogs I needed to use up...sliced and browned them in little bit of olive oil, stirred them into a pot of Velveeta cheese and shells I made by the directions on the box...put into casserole dish, sprinkled on some shredded mozzarella, then grated parmesan and baked until cheese melted...SO GOOD, so simple, was great as leftovers the next evening

Spicy rice ( spicy is however hot you make it) we usually get 4 servings out of it, but we take larger portions because it’s delicious. Use a large skillet to brown 1 pound of burger, drain . Add 2 bell peppers any color (whatever is on sale), sliced thin then cut in half, 1/2 a chopped onion, 1 can of beef broth, 1 can of Rotel (any heat), and 2 cups instant rice. Bring to a boil, cover and simmer about 5 minutes or until rice is cooked. Put cheese on top, cover and cook until cheese is melted. It’s a 1 pot meal that takes about 20 minutes from start to finish.

A can of fire roasted tomatoes, can of black beans drained, left over beef roast Shredded, cumin and paprika For quick Chili put everything in 2 qt pan simmer for 30 minutes

Oh I am from California grew up with this recipe. I had three sisters so there were 6 of us to feed. With my family of 4 it fed us with leftovers.

My mom used to make an American Lasagna. Using one pound of ground meat, egg noodles, four small cans or two jars of tomato sauce, and four slices of American cheese, it was delicious. I make a spaghetti or pasta dish using frozen zucchini, spaghetti, ground meat and two jars of tomato sauce. I usually put Morten's Nature seasoning, Italian seasoning, cayenne pepper, one small onion and half a bell pepper and four cloves of galic. Also you can use just onion powder, garlic powder and chopped garlic from a jar. I am not very good at measuring anything, I am more of a seat of my pants type cook. Love your channel.

Growing up my dad always thought that meat can’t be frozen once it’s thawed but as I’ve grown up I do it all the time. Just googled it and it says it’s safe. 🤷🏻‍♀️

I’m 67 years old, I don’t remember ever seeing ground chicken or ground turkey in grocery stores🤷‍♀️ ground beef was very affordable though so maybe my mom never bought it🤷‍♀️

That’s what I call shepherds pie. The only difference is I use creamed soup instead of the tomato. Need to try using the tomato soup instead

I always make broth when I have a chicken or turkey carcass available, whether its after a turkey dinner or roasting a chicken on a weekday. However, I have always had bad experiences making broth with rotisserie chicken carcasses. Does anyone know why this might be? The broth i get from using rotisserie chicken carcasses always tastes very 'dirt' like, its a very unpleasent taste and i always end up throwing it away. I usually simmer on low for 3 to 6 hours when I make broth, perhaps this is too much time for a rotisserie chicken carcass? I also make sure to take the scum off as the broth is simmering away. Any suggestions would be greatly appreciated!!

I make broth with store cooked chicken, max I do is 2 hrs. Turns out good. Try that. I do it in Insta pot.

An easy cheap casserole. Hotdogs, Mashed Potatoes, and cheese. (Can add sauerkraut if you like). Preheat oven to 350° In a 9x13 greased casserole dish layer hot dogs that have been cut in half, but not all the way through, mashed potatoes (real or instant), American Cheese Slices, or any cheese you have on hand. Repeat the layering one more time. Bake for about 30-45 mins until hot and bubble and 165° in the center. If adding sauerkraut put it in between the hot dogs and mashed potatoes

Favorite meal under $10 which always has leftovers is tacos/nachos/burritos/quesadillas. I add in 1 regular can or half the large can of refried beans when my meat is raw and cook it together. The beans absorb the grease and bulks it out. It also makes it be more hearty. I add any veggies we have on hand such as onions, peppers, corn, chili beans etc and sometimes add salsa. My kids like the burritos with meat fillings, refried beans and queso cheese over the top. My favorite is nachos and this meal is always enough for two full meals for us so really its under $5 per meal. But main ingredients cost right under $10.

Actually it will be really good. I have an ancient recipe that uses Heinz chilli sauce and adds curry powder in the sauce so this is a very similar flavour profile. That recipe is delicious. I promise it works! 😁

Ive never made a curry that didnt include the same ingredients found in salsa. Onions, peppers(bell and jalapeno), tomato, and garlic. Sounds like a quick short cut to me.

Born and Raised in New England ma'am and my food is anything but bland. I resent that statement of All New Englander's serve bland food! Salt & Pepper can only carry a dish so far on their own.

My to-go shoestring budget, pantry friendly dish is fantastic served cold as a salad or hot as a casserole: 1 pound of elbow macaroni 2 cans tuna 1 can green peas 1 cup (about? more or less to taste) mayonnaise or sour cream Cook elbow macaroni as directed, drain tuna and peas and mix together with mayo/sour cream (I prefer mayonnaise for the cold macaroni salad version and sour cream for the hot tuna noodle casserole version), salt and pepper to taste! If serving cold, refrigerate for a couple of hours and serve. If serving hot, put into a casserole dish and cover with cheese or buttered bread or cracker crumbs and bake until hot and bubbly. Yummmm the cold version benefits from the addition of a bit of sliced green onions and/or some cubed cheese. But the budget friendly version is great!!
